Lesser Yam is a starchy root vegetable that has a sweet, nutty flavor—a flavor and texture that seems a combination of potatoes and taro. Lesser yam root is high in fiber, lower in calories but very filling.  It's a good starchy substitute for rice and noodles. It's yellow or milky in color, it is often added to soups where it absorbs fatty juices and serves as a nutty thickener. They are like big logs, very strange, aren't they? 😃 Some people with sensitive skin react to the slime of lesser yam root and get itchy so you should wear gloves to prepare them.

>Củ từ là một loại rau củ giàu tinh bột có vị ngọt, béo - hương vị và kết cấu dường như là sự kết hợp của khoai tây và khoai môn. Củ từ ít chất xơ, ít calo hơn nhưng rất no. Nó là một chất thay thế tinh bột tốt cho gạo và mì. Nó có màu vàng hoặc trắng đục, nó thường được thêm vào súp để hấp thụ nước béo và dùng như một chất làm đặc bổ dưỡng. Chúng giống như những khúc gỗ lớn, rất lạ phải không? Một số người có làn da nhạy cảm và bị ngứa khi sơ chế củ từ nên bạn nên đeo găng tay khi rửa sạch nó nhé.

### Step 1: 
Scrape off the fish scales, remove the internal organs of the fish, I usually ask the salesperson to help me clean the fish then I just wash them. Slice the fish into thin pieces. In a pan, add cooking oil, when the oil is hot, add the fish, making sure the cooking oil covers the fish. Fry the fish until golden brown on both sides and crispy. Remove the fish to a plate.

>Cạo sạch vảy cá, bỏ nội tạng của cá, mình thường nhờ người bán hàng làm giúp mình cá rồi mình rửa sạch thôi. Thái cá thành từng miếng mỏng. Cho dầu ăn vào chảo, khi dầu nóng thì cho cá vào, nhớ cho dầu ăn ngập mặt cá. Chiên cá đến khi chín vàng cả hai mặt và giòn. Dọn cá ra đĩa.

### Step 2:
Remove lesser yam's thick slightly hairy peel with a knife. Cut it into small pieces, then soak them in salted water to minimize the slime as much as possible.  Then wash it thoroughly with water, take it out and let it dry, marinate them with 1 teaspoon salt and 1 teaspoon msg, mix well.

>Dùng dao loại bỏ phần vỏ dày và hơi có lông của củ từ. Cắt thành từng miếng nhỏ, sau đó ngâm với nước muối để hạn chế chất nhờn nhất có thể. Sau đó rửa thật sạch với nước, vớt ra để ráo, ướp với 1 thìa cà phê muối và 1 thìa cà phê mì chính, trộn đều.




### Step 3:
I usually use pork bones or pork ribs. Bring to a boil the bones and discard the water to further remove the impurities from the pork bones, rinse with cold water. Clean the soup pot as well. Drain and return pork bones to pot, add water, add salt, seasoning and cook for 20 mins, then add lesser yam. Cook  lesser yam until  are soft, use a large spoon to mash the lesser yam. You need to cook over low heat and stir constantly to prevent them from burning.

>Mình thường ninh xương heo hoặc sườn heo. Đun sôi xương và chắt bỏ nước để loại bỏ hết tạp chất trong xương heo, rửa lại bằng nước lạnh. Làm sạch cả nồi súp. Để ráo, cho xương heo vào nồi, thêm nước, thêm muối, hạt nêm và nấu trong 20 phút, sau đó cho củ từ vào. Nấu củ từ cho đến khi mềm, dùng thìa lớn tán nhuyễn củ từ. Bạn cần nấu trên lửa nhỏ và khuấy đều liên tục để tránh chúng bị cháy. 



### Step 4: 
Ladle pork bones and lesser yam into a bowl, garnish with fried fish pieces, and add chopped scallions and dill. Mix well before serving.

>Múc xương heo và củ từ ra tô, bày cá  chiên lên trên, cho hành lá và rau thì là nhỏ lên trên. Trộn đều trước khi dùng.
