Baking sourdough bread after a while / 久しぶりのサワードウのパン

Since my oven has been not in a good condition, I have had no motivation to bake bread, except for baking bagels and ciabatta ... But the tasty slow baked sour dough breads from bakeries in the city made me motivated to bake my own. So I've been making my own starter in the kitchen.

After feeding it every day, the bubbles started to appear. I never get tired of seeing these bubbles. Also I love the feeling of having an invisible, silent friend in the kitchen.

Yesterday was a cold and rainy day, so I decided to try a loaf using it. It could be a bit early to use it though. The loaf was slightly flat, as is often the case with young starter... It also because the dough was ciabatta dough but I was tempted to use a proofing basket 😅

The flat appearance with less holes inside is not so good but we liked the sour dough taste at least. It passed butter test!

I will continue working on recovering my sour dough baking skills over the easter holidays. And I would like to try a technique using a Pyrex glass container to make a small oven in the oven. I hope the technique complement the lost oven function.

オーブンの調子が悪くなって以来、パンを焼くモチベーションがすっからかんで、ベーグルとチャパタを時々焼くくらいのですが、市内のそれはそれはおいしいパン屋さんのサワードウのパンを立て続けに食べたらやっぱり自分でも焼きたい!ということで、種をおこしはじめてしまいました。

毎日餌をやって、無事気泡が出てきました。この泡、毎度のことながら見ていて飽きません。台所に目に見えない物言わぬお友達がいる感じも好きです。

昨日は雨降りの寒い1日だったので、さっそく使って一つパンを焼いてみましたが、若い種でありがちな微妙な膨らみ具合のパンに・・・。

ゆるめのチャパタ生地を無理に発酵カゴで二次発酵させようとした私のやらかしもありますが 😅 発酵カゴを目にしたら使わずにはいられなかったのです。焼き上がりの高さがでず、見た目はイマイチですが、味は上々、バターテストもパス🧈

ここから種をこなれさせていって、イースター休暇に焼きまくって感覚を取り戻して、バッツんまるまるなサワードウのパンを焼きたいです。パイレックスのガラス容器を使ってオーブンの中にもう一つオーブンを作って焼くようなテクニックがあるのですが、これも近々試してみたいです。このテクニックで調子の悪いオーブンでも安定してサワードウのパンが焼けたらいいな・・・と夢見ています。

そういえばオーブンの調子が悪いお話されてましたね。
パイレックス・オーブン、すごく興味があります。私が鋳鉄のダッチオーブンをオーブンの中に入れてパンを焼こうかと考えているのと同じかもしれない…。私も調べてみます。
気になっている「バターテスト」とは…バターをつけて食べて美味しいかどうか…?で判定されるのでしょうか。

バターテストマサのその通りです!

日本のオーブンは注意が必要かも。以前母がフランスパンを焼こうとして、石に水をかけたらマイコンが故障したことがあるのです🥲その点ドイツのオーブンは作りがシンプルなので心配なくてよいもののうちのは壊れているという😭

Is that using the pyrex instead of a Dutch oven? Some say using glass it may crack so I was worried and have never tried it. Will be seeing your technique to see if it works as I don't have a Dutch oven

Hi @livinguktaiwan, thank you a lot for the info! That's the technique. I thought it's OK since the Pyrex bowl is tolerant up to 300 degrees ... but good to be careful and do some more research. Now I start thinking that investing on a cast iron pot that can go in an oven would be better.
