A simple Chorizo and Onion soup.

This morning I set about making myself some soup for lunch and decided to experiment as I'd picked up some chorizo sausage yesterday from the supermarket reduced section.

So what you need:
2 onions.
5 slices of chorizo.
1 stock cube.

I rough chopped up the onions and put them in a pan with a little oil. Then I cut the chorizo into small squares (I found using a pair of scissors was easier than using a knife.)
Once in the pan just turn on the heat to wilt down the onions. Then put the kettle on to boil some water for the stock, I made up 500ml and by the time the stock was ready the onions had wilted down.

The just add the stock and turn down the heat to a simmer and leave for about 10 minutes.

It took less than 30 minutes from start to finish and that's my lunch sorted and from a quick taste test it's delicious.
