Albondigas / Meatballs

Saludos cordiales, comunidad de Foodies Bee Hive.  Hace algún tiempo, publiqué una receta de albóndigas, así como una de albóndigas de berenjena, en esta ocasión tengo una nueva y aún más rica receta de albóndigas, que aun siendo de carne resulta tan tiernas, pero aún más jugosas, que las de berenjena.

Some time ago, I published a recipe for meatballs, as well as one for eggplant meatballs, this time I have a new and even more delicious recipe for meatballs, which even though they are meat, they are as tender, but even juicier, than the eggplant ones.

## Ingredientes 

- 300 gr de carne de res molida, puede ser ternera o una mezcla de res y cerdo.
- 1 huevo
- 3 rebanadas de pan de molde
- 1/2 taza de leche
- 1/2 taza de una mezcla de cebollín, perejil, puerros, cilantro, apio y ají dulce, cortados pequeñitos.
- 1/2 taza de harina de maíz pre cocida o pan rallado
- Sal, pimienta, ajo en polvo y sazonador al gusto.
- 1 cucharadita de salsa inglesa.
- Aceite suficiente para freír.

>## Ingredients 
>
>- 300 gr of ground beef, it can be veal or a mixture of beef and pork.
>- 1 egg
>- 3 slices of sliced bread
>- 1/2 cup of milk
>- 1/2 cup of a mixture of chives, parsley, leeks, cilantro, celery and sweet bell pepper, cut into small pieces.
>- 1/2 cup of pre-cooked corn flour or bread crumbs.
>- Salt, pepper, garlic powder and seasoning to taste.
>- 1 teaspoon Worcestershire sauce.
>- Enough oil for frying.

## Procedimiento

Para empezar, en la media taza de leche (1), introduciremos las tres rebanadas de pan, que previamente romperemos en migas medianas (2). Con la ayuda de un tenedor, iremos triturando las migas de pan, al mismo tiempo que absorben la leche, al final tendremos una masa pastosa de migas embebidas en leche (3). En mi caso, como use poca leche, las migas la absorbieron por completo, así que la use tal cual quedo, pero su usted la nota muy húmeda, puede exprimir un poco las migas antes de usarlas en la mezcla de albóndigas.

En un bol colocaremos la carne y le agregaremos el huevo, la salsa inglesa y sazonaremos con sal, pimienta, ajo en polvo y sazonador (4), seguidamente añadiremos la mezcla de vegetales y la masa de pan embebido en leche (5) y procederemos a mezclar bien para que todo quede uniformemente distribuido (6), en este punto tendremos una mezcla de carne y demás ingredientes aún pastosa y a la que no podremos dar forma de albóndigas.

>## Procedure

>To begin with, in the half cup of milk (1), we will introduce the three slices of bread, which we will previously break into medium-sized crumbs (2). With the help of a fork, we will crush the bread crumbs, at the same time that they absorb the milk, at the end we will have a doughy mass of crumbs soaked in milk (3). In my case, as I used little milk, the crumbs absorbed it completely, so I used it as it was, but if you notice it is too wet, you can squeeze a little bit the crumbs before using them in the meatballs mixture.

>In a bowl place the meat and add the egg, the Worcestershire sauce and season with salt, pepper, garlic powder and seasoning (4), then add the vegetable mixture and the bread dough soaked in milk (5) and proceed to mix well so that everything is evenly distributed (6), at this point we will have a mixture of meat and other ingredients still doughy and to which we will not be able to shape the meatballs.

Seguidamente, añadiremos la harina de maíz pre cocida o el pan rallado (7), mezclaremos y notaremos que la mezcla se compacta, y que ahora si permite formar bolitas (8).

Haremos las albóndigas, tomando porciones de la mezcla y dándoles forma de bola, de aproximadamente unos cinco a siete centímetros de diámetro, que iremos friendo en una sartén con suficiente aceite caliente (9). Cocinaremos en el aceite hasta dorar por todas partes (10).

A partir de aquí, ya nuestras albóndigas estarían listas; sin embargo, podemos hacerlas aún más sabrosas, dejándolas un poco menos cocidas y terminando su cocción en una salsa, que les dé aún más sabor, en mi caso use una salsa de tomate, común de supermercado, a la que además añadí una media taza de la misma mezcla de vegetales picados que use en la carne. 

Sofreí los vegetales, agregue dos dientes de ajo picados y luego la salsa, ajuste la sazón, y cuando estuvo hirviendo agregue las albóndigas (11) y dejé que se terminaran de cocer en la salsa a fuego bajo, por unos cinco minutos.


>Next, we will add the pre-cooked corn flour or bread crumbs (7), we will mix and we will notice that the mixture becomes compact, and that now it allows to form balls (8).

>We will make the meatballs, taking portions of the mixture and shaping them into balls, approximately five to seven centimeters in diameter, which we will fry in a frying pan with enough hot oil (9). We will cook in the oil until golden brown on all sides (10).

>From here, our meatballs are ready; however, we can make them even tastier, leaving them a little less cooked and finishing their cooking in a sauce, which gives them even more flavor, in my case I used a tomato sauce, common from the supermarket, to which I also added a half cup of the same mixture of chopped vegetables that I used in the meat. 
>
>I sautéed the vegetables, added two cloves of chopped garlic and then the sauce, adjusted the seasoning, and when it was boiling I added the meatballs (11) and let them finish cooking in the sauce over low heat for about five minutes.

Estas albóndigas quedan muy tiernas, el agregado del pan embebido en leche las hace muy jugosas y apetitosas, en mi casa las acompañamos con puré de papas, pero pueden acompañarlas con pasta, arroz, vegetales o incluso usarlas para preparar un rico sandwich de albóndigas.

Igualmente, la salsa de tomate es un adicional, pueden comerse solo fritas, o usar la salsa de su preferencia, una bechamel o una mornay, una salsa de queso o una de crema de leche, todo depende de la creatividad de cada quien. Hasta la próxima.
