扁豆焖面
小时候最喜欢奶奶做的扁豆焖面，最最好吃，也是最具技术活儿的是手工擀面。

制作步骤：
1、	把洗净的猪肉切成小片放入小碗中，倒入适量生抽和料酒，再放适量盐和淀粉腌制备用，放入淀粉可以使肉更加滑嫩

2、	把四季豆洗净，去两头掐丝，掰成小段，在开水中焯2分钟，盛出放入碗中备用，葱姜切末备用
3、	下面就是最具技术活儿的手擀面了，准备适量面粉倒入盆中，放两勺盐，放盐可以使面更加有劲，口感更好。一边倒入凉水，一边搅拌，把面粉搅成面絮，然后下手揉成光滑面团，盖上盖密闭醒发1个小时
4、	取出面团，擀成面饼，越薄越好，如果怕沾黏可以在面上撒一些细玉米面，最后把擀好的面饼叠出层次，然后切成小条，叠的层次越多面条就越短，同时撒上面粉防止粘连

5、	取出炒锅，把油烧热，加入葱姜，倒入腌制的肉片，翻炒片刻，再倒入豆角，大火翻炒3分钟，加入适量生抽，蚝油和盐，然后关火
6、	准备好蒸锅，在篦子上刷一层油，然后把面条平铺在篦子上，再在面条上淋一层番茄酱，最后把炒好的肉片豆角倒在上面，大火蒸7到10分钟，这样扁豆焖面就做好了

手擀面口感劲道，配上肉片豆角和适量番茄酱，既能烘托出肉的本来味道又带有一些香甜口味，十分好吃，非常适合老人和小朋友
