Duck Stew ( Sour Taste)
I'm all about quick and easy recipes that are nutritious and healthy so, now I will introduce my formula: Stew Dracontomelon and Duck.😘 This is a fruit only available in summer in Vietnam, this fruit has a  sour taste. This is a fruit that is used to make soft drinks or as a seasoning to add acidity to dishes. This fruit is extremely popular and loved by many people because of its special taste, it is sold in all markets of Vietnam.🤗 We usually buy about 5-10 kg of dracontomelon store it in the freezer whole year, every time we boil vegetables or cook something sour, we add this fruit.😄 This recipe for sour duck  doesn't much oil, but instead uses a method for creating a delicate, smooth and succulent duck that goes perfectly with a lighter sweet and sour sauce. This is a no-frills dish that takes only 10 minutes to prepare and after 1 hour, we will have fragrant duck pieces full of flavor. It is so flavorful and perfect served over hot fluffy rice!😉

##### Here’s what you’ll need to make the perfect Duck Stew 
`Ingredients:`
- Duck meat
- Lemongrass tubers
- Ginger
-  Dracontomelon
- Salt, pepper, seasoning

1. Peel off the Dracontomelon skin, rinse with water. Use a large knife to pound the lemongrass and ginger until they are crushed (this helps the spicy flavor and aroma of the ginger and lemongrass to blend into the dish). The nature of duck meat has a stronger smell than chicken, so after I chop the duck meat into small pieces, I boiled the duck meat with water and then poured out the dirty water of the duck, rinsing the duck meat with salt and lemon. Adding duck to the pot, I use the pot for all of my stew recipes because I will be stewing duck with spices and water for a long time. |1. Cạo vỏ quả sấu, rửa sạch với nước. Dùng một con dao lớn để đập mạnh sả và gừng cho đến khi chúng nát ra (điều này giúp vị cay và mùi thơm của gừng và sả hòa quyện vào món ăn). Bản chất thịt vịt có mùi tanh nồng hơn thịt gà nên sau khi chặt thịt vịt thành từng miếng nhỏ, mình luộc sơ qua với nước rồi đổ bỏ nước bẩn của vịt, rửa lại thịt vịt với muối và chanh. Thêm vịt vào nồi, mình  sử dụng nồi cho tất cả các công thức hầm của mình vì sẽ hầm vịt với gia vị và nước có vẻ lâu đấy.

>Đối với món ăn này mình nghĩ chúng ta nên thêm càng nhiều gừng và càng nhiều sả càng tốt càng thêm nhiều thì món ăn càng thơm càng ngon nhé.

2. Add salt, cooking  and stir to prevent the duck meat from sticking to the pot. Stir-fry for about 5 minutes, add ginger, lemongrass and dracontomelon. Add enough water to cover the duck meat and cover the pot, you must check the amount of water in the pot, if the water is dry, add more water. Thêm súp, vừa nấu vừa đảo đều để thịt vịt không bị dính vào nồi. |  Xào khoảng 5 phút, cho gừng, sả và quả sấu vào. Cho lượng nước vừa đủ ngập mặt thịt vịt và đậy nắp nồi, bạn phải kiểm tra lượng nước trong nồi, nếu cạn nước thì châm thêm nước.

3. Cook for 1 hour, until the stew thickens a little and duck are soft. Check the taste of the dish and adjust the seasoning if desired. Serve hot with accompaniments such as boiled rice.|  Nấu trong 1 giờ, cho đến khi nước hầm đặc lại một chút và vịt mềm. Kiểm tra hương vị của món ăn và điều chỉnh gia vị nếu muốn. Ăn với cơm nóng với các món ăn kèm như rau luộc nghen.
