 It is definitely not as hot as it was a couple of days ago but our bodies are still craving light and fresh meals. Couscous salad is one of our favorites as it fills you up, is very nutritious, versatile and extremely fresh! So after having my morning tea I decided to make this dish so it would be cool by dinner time!  I start off by cooking the couscous according to package directions. However before I fluff it, I always add a spritz of lemon juice and a little extra olive oil.  In a pan, I add olive oil, 2 tablespoons of diced garlic and one can of drained corn and cook it all until itโs a bit roasted looking. I set it aside and let it cool and I proceed to chop cilantro, green onions, red onions, tomatoes and add them to the couscous as well as one can of drain kidney beans and one can of drained green beans. To this I add a splash up balsamic vinegar, red pepper flakes, salt and pepper and the juice of one lime. I add the corn and toss it thoroughly.  I let it cool in the fridge at least two hours and right before serving I add a little feta cheese!  So delicious and super easy to make! We eat this on its own or sometimes as a side but I guarantee you itโs so simple and delicious. How do you prepare your couscous?
