食饮自主-12, 自制天然樱桃香蕉果酱

不知何时，樱桃搭上香蕉成了绝配，德国人称之为Kiba（Kirsch & Banane），而且市面上有很多Kiba的产品，什么果汁、果酱、冰激凌等等。

如今正是火热的樱桃季，当然会过剩吃不完，制成果酱是一个很好的保存办法，也很简单，下面就来个自制的Kiba果酱谱子：
1. 樱桃去核，与香蕉按个人喜好的比例搭配，然后用家用搅拌机混合成果泥。
2. 将果泥在锅中加热至沸腾，目的是杀死其中的微生物，然后加糖。通常加的是一种专用的使果泥凝结成胶状的果胶糖，这种糖一般是非天然的。我在一次偶然的制作过程中发现樱桃加香蕉打成泥，静置一段时间之后会自然形成果胶冻状，所以可以不加这种果胶糖，取而代之的是一种椰子花提炼的天然糖。

3. 将果泥装入事先经过煮沸的玻璃瓶中，也是为了杀菌，待稍微冷却之后密封，置于冰箱保存即可，大功告成！
