牛至，學名：*Origanum vulgare*，英文名：oregano。

做烹調用時，常與番茄、乳酪搭配；牛至與羅勒是給予義大利菜獨特香味的兩大用料。因時常撒在披薩餅上，所以又名披薩草。

牛至实在是一种简单易养之极的芳草，不用任何照料也会疯长，甚至会成为需要控制的野草。这三丛就长的极为繁茂，需要瘦身了。修剪在朴门农人眼里也就是意味着收获。牛至通常使用的是它的叶子，收获叶子的最佳时机是在临近长出花蕾之前，这时候的叶子里的芳香成分是最浓厚的，也就是现在。
