Hola amigos, espero se encuentren muy bien el día de hoy. Quizá llego un poco tarde a esta iniciativa pero realmente estaba tratando de inspirarme para ver que receta podía llevar a cabo, la verdad nunca antes había cocinado algún tipo de comida sin gluten pero me llamo mucho la atención la iniciativa por lo que aquí les comparto el día de hoy mi propuesta. Se trata de un delicioso bizcocho de naranja con glaseado, por supuesto, libre de gluten. Sin más por aquí les dejo los pasos, espero les guste 😊

- 2 huevos.
- 50g de Azúcar.
- Naranja.
- Aceite de oliva.
- 50g de Maicena.
- 50g de Harina de arroz libre de gluten.
- 1/2 cdita de impulsor o polvo de hornear.
- 80g de Azúcar glass.

- 50g cornstarch.
- 50g of gluten free rice flour.
- 1/2 teaspoon of baking powder or baking powder.

<h5>Preparación </h5>
Paso 1️⃣
En el bol de la batidora vamos a agregar las claras de dos huevos (sin querer se me fue un poquito de yema) y vamos a batir a velocidad media muy bien hasta que se vuelva una espuma, una vez haya tomado la consistencia que deseamos vamos a ir agregando poco a poco los 50g de azúcar continuamos batiendo hasta que se haya integrado todo el azúcar y tenga una apariencia de merengue, luego vamos a ir agregando las yemas de huevo una por una y batimos, una vez estén bien integrados vamos a añadir una cucharada de aceite de oliva, puedes usar aceite vegetal, de girasol o el que prefieras.

Paso 2️⃣
Cuando el aceite se haya integrado bien a la mezcla vamos a agregar ralladura de naranja y 50g de zumo de naranja recién exprimido. Una vez que este todo incorporado vamos a tamizar en la mezcla 50g de harina de arroz libre de gluten, 50g de maicena o fécula de maíz junto con la 1/2 cdita de polvo de hornear (me tomé la tarea de investigar estos dos ingredientes ya que bueno, no estaba segura si eran libres de gluten pero me encontré con la grata sorpresa de que si eran) revolvemos con movimientos envolventes con ayuda de una espátula hasta que todos los ingredientes se hayan integrado por completo.

Paso 3️⃣
Enmantequillamos y enharinamos un recipiente con la harina de arroz, en este caso yo estaré usando uno de vidrio. Vertemos la mezcla y llevamos al horno por 30 minutos a 180°

Step 3️⃣
Butter and flour a bowl with the rice flour, in this case I will be using a glass bowl. Pour the mixture and bake in the oven for 30 minutes at 180°.

Paso 4️⃣
Una vez hayan pasado los 30 minutos le insertamos un palillo a ver si el bizcocho esta listo, si sale limpio podemos apagar el horno y dejar que se termine de cocinar con el calor de este, pasados unos 10 minutos retiramos del horno y dejamos reposar, cuando tenga una temperatura ambiente desmoldamos y pasamos a preparar el glaseado.

Step 4️⃣
Once the 30 minutes have passed we insert a toothpick to see if the cake is ready, if it comes out clean we can turn off the oven and let it finish cooking with the heat of this, after about 10 minutes remove from the oven and let stand, when it has a room temperature unmold and go to prepare the glaze.

<h5>Preparación del glaseado</h5>

En un plato hondo añadimos 80g de azúcar glass junto a dos cucharas de zumo de naranja, revolvemos muy bien hasta que quede textura de una crema y por último vertemos sobre el bizcocho.

Bueno como les comentaba al inicio, no suelo cocinar este tipo de comidas o recetas libres sin gluten pero quería intentarlo, me temo que el bizcocho no creció tanto como esperaba y aún sigo descifrando cual pudo haber sido el posible error ya que agregue las cantidades correspondientes, más sin embargo el sabor sin duda estuvo riquísimo; de hecho pensé que a lo mejor sabría un poco raro por el tipo de harina, pero estaba muy equivocada. A mi familia y a mi nos encantó el resultado, espero que también les haya gustado a ustedes; si a lo mejor saben de algún tip para que el bizcocho quedé más esponjoso con gusto los leeré.
