Hola chicos, feliz día! Espero estén teniendo una linda semana. Por mi parte bastante bien, aprendiendo bastante en mis clases de pastelería y de hecho hoy les traigo una receta que aprendí hace poco, que debo decir, es mi primer intento realizándola y aunque el resultado puede no considerarse el mejor, me gustaría compartírsela ya que los consejos serán super bien recibidos. 

Antes, debo dejar en claro que esta receta al ser preparada en clase fue un trabajo realizado junto a una compañera, por lo que la verán en algunas fotos ya que decidimos dividirnos las tareas para un mejor trabajo, sin más. Espero que les guste 😊

- 250ml de agua.
- 1/2 cdita de sal.
- 80gr de mantequilla sin sal.
- 150gr de harina repostera.
- 4 huevos.
- Esencia de vainilla.

Paso 1️⃣
Lo primero que hice fue colocar los 250ml de agua junto con la mantequilla y la sal en una olla, lleve la mezcla al fogón a fuego medio y espere que esta rompiera hervor, una vez lista retiré del fuego y agregué de golpe la harina repostera, revolví muy bien y rápidamente con una espátula hasta que desaparezcan grumos. Tiene que quedar la masa como en la foto que les comparto abajo, reservamos para que suelte el calor.

Paso 2️⃣
Una vez la masa estuvo fría procedí a añadirle los huevos previamente batidos uno por uno y a su vez iba removiendo con movimientos envolventes y con ayuda de una espátula de madera, una vez la mezcla estuvo suelta le añadí 1 cdita de esencia de vainilla y procedí a rellenar la manga pastelera a la cual le puse antes una boquilla.

Paso 3️⃣
En una bandeja pusimos papel parafinado y marcamos el tamaño en que queríamos los profiteroles, hicimos la forma con mucho cuidado y llevamos al horno previamente precalentado a 175° durante unos 30 minutos, igual hay que estar pendientes porque cada horno es diferente.

In a tray we put waxed paper and marked the size we wanted the profiteroles, we made the shape very carefully and took to the oven previously preheated to 175 ° for about 30 minutes, just have to be aware because each oven is different.

- 1/2 litro de leche.
- 2 yemas de huevo.
- 50gr de azúcar.
- 25gr de harina repostera.
- 10gr de maicena.

Esta preparación si la hizo mi compañera, ya que como dije antes, cada una se repartió una tarea. Lo primero que hizo fue separar 1/4 del medio litro de leche y le añadió la harina, la maicena, las 2 yemas de huevo y batio muy bien hasta que estos se integraran. Luego añadió el azúcar, la ralladura de limón y la esencia de vainilla. Una vez lista esta parte, se coloca en la estufa el resto de la leche y una vez haya hervido se le va agregando en hilo a la mezcla anterior, esta mezcla se lleva a baño María hasta que espese.

La última parte es la más complicada o bueno, para nosotras lo fue ya que se trataba de armar o montar la torre de profiteroles, lo primero que hicimos fue preparar el caramelo para el cual añadimos 150gr de azúcar a 50ml de agua y llevamos a fuego medio-alto, una vez listo dejamos reposar un poco mientras rellenábamos los profiteroles con la crema pastelera, para esto nos ayudamos de una manga pastelera y una boquilla tamaño 8.

Ahora bien, para montar la torre lo primero fue bañar la parte baja del profiterol con caramelo e irlo pegando al disco dorado, hicimos una base de 8 profiteroles para luego ir reduciendo la cantidad. La base quedo perfecta pero lo complicado vino después cuando intentamos que los profiteroles que tendrían que ir arriba se quedaran fijos ya que se movían un poco y los quemones con el caramelo no colaboraban.

Habíamos visto videos donde por lo general se ayudan con una base en forma de cono para que la torre quede mucho más linda y no tengan este problema de que se caen o doblan los profiteroles, pero bueno, no nos dejaron usarla ya que querían enseñarnos a prepararla sin necesidad de base.

We had seen videos where they usually use a cone-shaped base to make the tower much prettier and to avoid the problem of the profiteroles falling or bending, but well, they didn't let us use it because they wanted to teach us how to prepare it without a base.

Al final este fue el resultado, el cual aunque no es ni la mitad de como realmente debería quedar nos gustó mucho ya que para ser nuestra primera vez los profiteroles quedaron muy lindos y sabían demasiado rico, la crema pastelera le daba un muy buen sabor con el toque del limón, esta torre se caracteriza por decorar con telarañas de caramelo pero como lo usamos también como pegamento se nos agoto muy rápido y salieron unas telarañas pero mini 🙈 Claramente debemos trabajar más en el montaje de la torre y también el caramelo para que a la próxima nos quede como en realidad debe ser.

Me gustó mucho trabajar con mi compañera ya que sentí nos entendimos bastante bien, hubo buen ambiente y eso también es importante para un buen resultado en la cocina. Como el merito no es solo mío al final le pedí que nos tomáramos una foto juntas con nuestro trabajo y así poder compartirla por aquí.
