Irish soup with bacon
Very simple soup with bacon, potatoes and savoy cabbage. Dark green
savoy cabbage in combination with tomatoes gives a pleasant color to
the soup. Savoy cabbage can be replaced with the usual white, Brussels
or Beijing.

250 g of bacon
2 large potatoes
1 can (800 g) of canned tomatoes with juice
1 cup chicken broth (can be made from a cube)
salt and black pepper to taste
2 glasses of chopped savoy cabbage (or other cabbage)

Bacon cut, fry until ruddy. You can cook directly in a soup pot.

Peel potatoes, cut into cubes. Add to the pan. Add chopped tomatoes,
with juice. Pour broth, salt and pepper. Bring to a boil over medium
heat, cook for 20 minutes.

Add chopped cabbage, boil for a few more minutes to allow the cabbage
to soften. Done!
