Saludos a los foodies de esta comunidad, hoy he querido traer la receta de mi gran especialidad: la sopa. En Venezuela es muy común los domingos en los que se reúnen la familia y los amigos para tomar este cálido conjuro de sabores y vitaminas. Incluso es uno de los platos preferidos para cocer a la parrilla en campamentos y viajes a la playa. También le llamamos Sancocho (aunque el sancocho solo lleva ñame, un tubérculo delicioso).

Existen muchos tipos de sopa y toda son deliciosas, algunas tienen nombres muy pintorescos, está la "Levanta muerto", la Fosforera, ésta última la probé una vez cuando vivía en La Guaira, se dice que es afrodisíaca por la gran cantidad de mariscos que contiene, a mi solo me dio sueño y caí rendida a las siete de la noche hasta el día siguiente. Todas son mis preferidas. 

En Venezuela cada región tiene su particularidad, tenemos la sopa andina, la oriental, la caraqueña, todas tienen su particularidad, imagino que la sopa que yo hago es una mezcla de muchos de los estilos de sopa, pues he vivido en los cuatro puntos cardinales de mi país. 

Ahora que en Caracas está haciendo mucho frío, por lo que cociné una sopa para mantenernos calientitos, somos un país tropical y no estamos acostumbrados a este frío invernal, que éste año pegó más fuerte. 

Así que prendí la cocina y me dediqué a preparar una sopa de pollo, quise hacerla blanca, es decir que todas sus verduras fuesen blancas, ya saben papa, yuca, ocumo, y aunque siempre le agrego auyama (calabaza) esta vez se me olvidó cuando fui al mercado que queda al lado de mi casa.

- Pollo (Yo usé medio pollo, porque somos pocos en casa)
- 1 Cebolla
- Ajo
- Ají
- Pimentón, le da un poco de color y tiene vitaminas y minerales que combaten la anemia,  lo que siempre repiten todas las abuelas
- Papas, las que gustes y quepan en tu olla
- Ocumo
- Yuca
- Cilantro, mucho cilantro

Lo primero que hice fue picar todos los vegetales, y ponerlos a freír, uno por uno, ya lo he dicho antes, primero la cebolla y al colocarla poner una pisca de sal, y así con cada ingrediente,  para potenciar el sabor de cada ingrediente. Una vez que los vegetales se hayan dormido, freír el pollo sobre la cama de vegetales, para que el pollo pueda absorber todos estos sabores.

Acá rematamos el pollo, con sal, si lo desean algún condimento, yo usé Adobo, porque me recuerda a Adobe Illustrator y al meme y es muy rico, y pimienta recién molida, que es la que conserva mejor sus propiedades terapéuticas, y dejar cocinar bien el pollo, mientras se cocina, proceder a pelar y cortar las verduras, al mismo tiempo coloco una olla con agua a hervir, porque mi bisabuela decía que si se colocan las verduras en la sopa con el agua fría la sopa queda oscura y no lo puedo permitir, pues es una sopa blanca.

De verdad eché en falta la calabaza en esta sopa, siempre la coloco de primer lugar en el caldo, para que esté completamente deshecha al retirar la sopa del fuego, esto le aporta un poco de consistencia y espesor a la sopa, luego voy colocando las verduras en el agua, que ya debe estar hirviendo, de mayor dureza a menor menor dureza, por lo que en este caso coloqué primero la yuca, seguido del ocumo ( o malanga, como también se le conoce, !la amo!) y termino con las papas. Así ninguna verdura estará dura al momento de comer.

Yo nunca acertaba con el cilantro, unas veces lo colocaba al principio, otras lo freía con los vegetales, pero un amigo chef me dijo que el cilantro no se freía, así que dejé de hacerlo. Luego noté que si se coloca con el agua hirviendo es que desprende su aroma, per a veces no funcionaba, pero mi novio, que no tiene paciencia, agarró el cilantro y lo cortó con las manos y lo agregó, y vaya... dio resultado. Entonces mi conclusión es que debe ser troceado con las manos y no con el cuchillo, ni agregarlo entero, así el cilantro (tan maravilloso) tiene varios lugares para dejar salir su delicioso aroma. Cuando la más dura de las verduras estén blandas (una hora aproximadamente, mientras más tiempo mejor) es hora de apagar la sopa y disfrutar, luego caer rendido y dormir.

Greetings to the foodies of this community, today I wanted to bring the recipe of my great specialty: soup. In Venezuela it is very common on Sundays when family and friends get together to have this warm incantation of flavors and vitamins. It is even one of the favorite dishes to grill on camping and beach trips. We also call it Sancocho (although sancocho only has yam, a delicious tuber).

There are many types of soup and all are delicious, some have very picturesque names, there is the "Levanta muerto", the Fosforera, the latter I tried once when I lived in La Guaira, it is said to be an aphrodisiac because of the large amount of seafood it contains, it just made me sleepy and I fell asleep at seven at night until the next day. All of them are my favorites. 

In Venezuela each region has its particularity, we have the Andean soup, the oriental, the Caracas, all have their particularity, I imagine that the soup I make is a mixture of many of the styles of soup, as I have lived in the four cardinal points of my country. 

Now that in Caracas it is getting very cold, so I cooked a soup to keep us warm, we are a tropical country and we are not used to this winter cold, which this year hit harder. 

So I turned on the stove and I started preparing a chicken soup, I wanted to make it white, that is to say that all the vegetables should be white, you know potato, yucca, ocumo, and although I always add pumpkin, this time I forgot when I went to the market next to my house.

- Chicken (I used half a chicken, because there are few of us at home)
- 1 onion
- Garlic
- Chili
- Paprika, it gives a little color and has vitamins and minerals that fight anemia, you know those things that fight anemia, what all the grandmothers always repeat
- Potatoes, as many as you like and fit in your pot.
- Ocumo
- Yucca
- Cilantro, lots of cilantro

The first thing I did was to chop all the vegetables, and put them to fry, one by one, as I said before, first the onion and when placing it put a pinch of salt, and so on with each ingredient, to enhance the flavor of each ingredient. Once the vegetables have fallen asleep, fry the chicken on the bed of vegetables, so that the chicken can absorb all these flavors.

Here we finish off the chicken, with salt, if you wish some seasoning, I used Adobo, because it reminds me of Adobe Illustrator and the meme and it is very rich, and freshly ground pepper, which is the one that best preserves its therapeutic properties, and let the chicken cook well, while it is cooking, proceed to peel and cut the vegetables, at the same time I place a pot with water to boil, because my great grandmother said that if you put the vegetables in the soup with cold water the soup is dark and I can not allow it, because it is a white soup.

I really missed the pumpkin in this soup, I always put it first in the broth, so that it is completely undone when the soup is removed from the fire, this gives a little consistency and thickness to the soup, then I place the vegetables in the water, which should already be boiling, from harder to softer, so in this case I put the yucca first, followed by the ocumo (or malanga, as it is also known, I love it!) and finish with the potatoes. This way none of the vegetables will be hard to eat.

I never got it right with the cilantro, sometimes I put it at the beginning, sometimes I fried it with the vegetables, but a chef friend of mine told me that cilantro does not fry, so I stopped doing it. Then I noticed that if you put it in with the boiling water it gives off its aroma, but sometimes it didn't work, but my boyfriend, who has no patience, grabbed the cilantro and chopped it with his hands and added it, and wow... it worked. So my conclusion is that it should be chopped with the hands and not with the knife, nor add it whole, so the cilantro (so wonderful) has several places to let out its delicious aroma. When the hardest of the vegetables are soft (about an hour, the longer the better) it is time to turn off the soup and enjoy, then fall asleep.

jajaja qué risa que te haya tumbado un *Levanta muertos* jajaja ta bueno, pero insuperable el condimento del *Adobe Illustrator * x’D

Lo del cilantro me causa curiosidad, al final me imagino que las abuelas en casa tampoco son muy precisas cortando las hierbecitas, quizá sea una cuestión de como se rompe la estructura, interesante deliberación, pero así tras ensayo y error como tú, se va aprendiendo.

Yo nunca he sido de sopas, pero jamás pude evitar entre ellas estando en Venezuela y es que definitivamente es una cuestión bastante cultural. Siempre le ponía limón y alguna cosa más para comerla más fácilmente xD

Lo que sí es totalmente acertado es elegir este plato para sobreponerse a esos días fríos, sin duda!

Cuando vengas de visita a Venezuela te invito una de mis sopas!! son legendarias, aunque de verdad disfruto muchos las de las señoras que saben, pero esconden todos los secretos y misterios,  de una sopa profesional, mi secreto es que la hago apta para el paladar de un niño, que no le gustan algunos "sabores de adultos" como a mi.

Yo he aprendido así, entre ensayo y error, porque nadie me enseñó, pero he absorbido conocimiento de la experiencia  de los demás
