Fettucini with rapini and chanterelles in cream sauce

It's starting to cool down outside. This sometimes makes me want to eat pasta. I also thought it would be an appropriate way to use the chanterelle mushrooms that I purchase from our weekly park market. Along with the mushrooms I added some greens. I spotted Rapini in a nearby grocer, which is also know as Brocoli rabe.

If you have had rapini you'll know that even though it resembles broccoli, it doesn't taste like it. At least not to me. It also resembles broccolini and Chinese broccoli. The taste is very distinct from those other greens. It's said that it is related to turnip. The taste does actually have turnip like hints. 

For some people I know personally, they wouldn't go beyond one bite of this, once they discovered it's bitterness. For me it's a beautiful bitterness, almost peppery and nutty, that combines with a texture that goes down really nice. For those who know this green and love this green, they understand what I'm talking about.

The Chanterelles to me are mild and don't actually jump out in flavor but I love the texture. To me they're meaty yet delicate and go great with pasta.

**Rapini and Chanterelle mushroom sauce**
1 bunch rapini (broccoli rabe)
3 cups Chanterelle mushrooms
2 tablespoon vegan butter
1 cup chopped onion
4 cloves minced garlic
2 tablespoons black garlic oil
1 teaspoon truffle infused olive oil
1 teaspoon black pepper
1 teaspoon oregano
3 tablespoons vegetable broth powder
Juice of 1/2 lemon plus zest
Salt to taste

I like to add lemon to rapini. Somehow for me it compliments the peppery bitterness . The zest is subtle and aromatic. I also think it combines well with a creamy and garlicky base.

I used a vegan chicken powder to add a boost of flavor to the sauce.

I cooked the onion in butter and a little olive oil. I wasn't holding back on the fat for this. My mind was  in Europe for this.

After the onions were softened I added garlic. I like my pasta garlicky.

After the onions, and garlic I added the mushrooms and other ingredients except for the Rapini.

The cream that I used was thick cooking cream. I always choose soy because of the neutral flavor but these cooking creams also come in oat and rice.

At first I had pondered using flour to thicken the sauce, but the cream made the sauce thick enough.

I didn't add the rapini until the very end. It doesn't take long to cook.

Meanwhile I had already made the fettucini. I sometimes use store bought pasta which I like but when I have time to make my own, I enjoy the pasta that much more. 



**Fettucini pasta**
1 cup all purpose flour
1 cup semolina flour
1 teaspoon salt
1 1/2 tablespoon olive oil
3/4 to 1 cup water

I added the water slowly to make sure that the dough was a good consistency. I don't want it too wet or it will stick to the machine and fall apart. I also wanted it moist enough to knead into a workable dough. The water amount listed is just a guide. I'm not sure in the end what I actually used. I had to go by feel. It was on the tougher side as I kneaded it for around 10 minutes.

I purchased a pasta machine and it was worth every penny. It doesn't take long to make pasta except for the resting time for the dough. I let it rest for around 30 minutes. I rolled it first with a rolling pin then flattened it in the machine.

The most satisfying part is when it goes through the cutter. I chose the thicker fettucini one. There is also a spaghetti one.

Another great purchase I got was the pasta hanger. This keeps everything from tangling and sticking together.

Fresh pasta only takes a few minutes to cook. I don't like it overcooked but it is cooked through. I cooked this for around 2 minutes in boiling water.

After draining the pasta combine gently with the rapini mushroom sauce.

I often make a quick vegan parmesean from ground almonds, nutritional yeast,salt and citric acid but I didn't bother this time.

I added one of my favourite condiments which was balsamic glaze. It's a little sweet so I just drizzle lightly. I just really like the acidic sweetness in combination with the bitter peppery Rapini.

I also added crush chilies which to me is a must for my pasta. Actually I could put crushed chilies almost everywhere.

This looks really fantastic, and I love that you go to the trouble of making the pasta yourself. Your fettucini really look perfect!

Chanterelles are not easy to come by around here as well. I have a park nearby where once a week a market with local organic produce comes by complete with a mushroom vendor. I just recently discovered chanterelles.
