Esta es una planta que me  encanta, útil, de fácil cultivo y mantenimiento y muy versátil para preparar, por ello, hoy quiero compartir sus propiedades con todos ustedes.

La conocida espinaca (**Spinacea oleracea**) es una hierba anual de origen asiàtico, de porte bajo, de hojas muy verdes de la que pueden encontrarse diferentes variedades, algunas de hojas rizadas y otras de hojas lisas, siempre comestibles.
Algunas variedades como la que cultivo actualmente en mi jardin,son de hàbito trepador y crecimiento indeterminado
Tiene la ventaja de que puede ser cultivada durante todo el año, lo que la hace adecuada para huertos o jardines urbanos y patios productivos. Puede sembrarse directamente en el terreno, sin hacer semillero. Crece bien en materos u otros envases, siempre que se le coloque buena tierra, se abone en forma orgànica y se riegue periódicamente. Produce gran cantidad de semillas que podemos guardar para futuras siembras o para compartir con personas interesadas en su cultivo.

*The well-known spinach (** Spinacea oleracea **) is an annual herb of Asian origin, of short growth, with very green leaves of which different varieties can be found, some with curly leaves and others with smooth leaves, always edible.
Some varieties, like the one I currently grow in my garden, have a climbing habit and indeterminate growth.
It has the advantage that it can be cultivated throughout the year, which makes it suitable for orchards or urban gardens and productive yards. It can be sown directly in the field, without making a seedbed. It grows well in pots or other containers, as long as good soil is placed in it, it is fertilized organically and it is watered periodically. It produces a large amount of seeds that we can save for future plantings or to share with people interested in its cultivation.*

Su uso en la cocina es muy conocido por su versatilidad y su calidad nutritiva, no asi sus propiedades medicinales y beneficios para la salud humana.
En ese sentido, les comparto que la espinaca, al igual que la mayoría de las hierbas comestibles, presenta un elevado contenido de vitamina A, C, K, B12 y Ácido fòlico, también es rica en  minerales como el magnesio y el calcio. Es uno de los vegetales consumidos por el ser humano con mayor contenido de vitamina K.

**Enfermedades que puede prevenirse consumiendo espinaca:**
Por su alto contenido de vitamina A, favorece la curación de ùlceras gástricas en tratamientos alternativos.
Los altos contenidos de Luteina y Zeaxantina de este vegetal, favorecen  la visión.
Los altos contenidos de viamina K, ayudan a la retención del calcio en los huesos, junto con los Folatos ayudan a reducir los riesgo de padecer Alzheimer, pues fortalecen el sistema neurológico.
La espinaca contiene Kaenferol, sustancia que ayuda a prevenir enfermedades del corazòn.
Su alto contenido de àcido fòlico contribuye al control de la hipertensiòn arterial.
Es un potente antiinflamatorio que puede reducir los dolores en las articulaciones producidos por la artritis.
 Debido al alto contenido de fibra de las hojas, ayuda a mejorar el movimiento de los intestinos, por lo que es recomendable su consumo por personas estìticas.
Definitivamente ¡Hay que consumirlas!

** Diseases that can be prevented by consuming spinach: **

**¿Cómo debes consumirla?**
Debes adquirirlas lo mas frescas posible de allí la importancia de cultivarlas en tu patio o jardín, se deben lavar con cuidado, pero no dejarlas remojando para que no pierdan sobre todo la vitamina C. Si se cocinan debe hacerse en poca agua y durante 2-3 minutos, escurrir inmediatamente para que no se pierdan sus propiedades.

Como un detalle adicional, les quiero dejar una de mis formas preferidas de consumir la espinaca: Salteada con ajo y cebolla.
Se requiere: un manojo de espinacas frescas (250gr), 3 dientes de ajo, una cebolla mediana, una cucharada de aceite, pizca de sal y queso duro rallado (100 gr).
Salteas en una sartèn con el aceite,las cebolla, los ajos y la espinaca por 2-3 minutos hasta que suavicen un poco las hojas, retirar del fuego y servir con queso rallado por encima.

** How should you consume it? **
*You must acquire them as fresh as possible, hence the importance of growing them in your patio or garden, they should be washed carefully, but not left soaking so that they do not lose especially vitamin C. If they are cooked, it should be done in little water and for 2- 3 minutes, drain immediately so that its properties are not lost.*
*As an added detail, I want to leave you one of my favorite ways to consume spinach: Sautéed with garlic and onion.
Required: a bunch of fresh spinach (250gr), 3 cloves of garlic, a medium onion, a tablespoon of oil, a pinch of salt and grated hard cheese (100 gr).
Sauté in a pan with the oil, onion, garlic and spinach for 2-3 minutes until the leaves soften a little, remove from heat and serve with grated cheese on top.*
