Greetings lovers of good food! Today I would like to share with you a recipe that I loved and that could accompany a lunch or dinner because of the amount of ingredients and how nutritious it is, it is a ***peasant salad*** with the flavors of the countryside on the table. join me and I will show you the process of elaboration.

50 grams of shelled corn
50 grams of green beans
100 grams of purple cabbage
1 small bell pepper
100 grams of Quinoa
100 grams of carrots
100 grams of potato
5 cloves of garlic
1 branch of scallion

Salt to taste
Oregano and turmeric to taste
3 tablespoons soybean oil
1 tablespoon vinegar

Orégano y cúrcuma al gusto
3 cucharadas de aceite de soya
1 cucharada de vinagre

On Monday when I went to the market I took care of getting the fresh ingredients to prepare this delicious salad. 

At the spices and grains stand I bought the Quinoa. I also took turmeric, hibiscus flowers to make a tea and chia.

I also stopped to buy the corn that was already shelled and packed in half kilo bags. I like to buy the tender corn to prepare salads and cachapas. This time I got $0.5 per bag of corn.

***Preparation:***

-We select the cabbage leaves, wash them very well and put them together forming a roll. Then we are going to take very thin strips and place them in a container with the vinegar. Cover and set aside to marinate.

-Wash the Quinoa very well. This process can consist of 3 or 4 washes. I like to wash the Quinoa in a large bowl, fill it with water and stir it by hand. The water changes color to cloudy. I pass through a strainer and repeat this process until the water is crystal clear. 

>>-Lavamos muy bien la Quinoa. Este proceso puede consistir en 3 o 4 lavadas. Me gusta lavar la Quinoa en un recipiente grande, lo lleno de agua y revuelvo con la mano. El agua cambia de color a turbia. Paso por un colador y repito este proceso hasta que el agua sea cristalina.

-Measure 1 cup of Quinoa and 2 cups of water. Add salt and to taste, a tablespoon of oil and bring to medium heat.

>>-Medimos 1 taza de Quinoa y 2 de agua. Agregamos sal y al gusto, una cucharada de aceite y llevamos a fuego medio.

-Cut all the ingredients into small squares.

-Place the corn, potato, zucchini, carrot and green beans in the pressure cooker. I used the pressure cooker and gave it 5 minutes of pressure with 1 ounce of water. 


>>-Colocamos en la olla de presión el maíz, la papa, el calabacín, zanahoria y las habichuelas. Yo utilicé la olla de presión y le di 5 minutos de presión con  1 onza de agua.

-In a frying pan we put the oil, when it is hot we are going to sauté the cabbage and we are going to incorporate the rest of the ingredients. 

I would like you to appreciate the delicious aroma that all these sautéed ingredients give off.

Once the Quinoa is dry and we have the sauté, we are going to incorporate everything in the same pan.

We can serve this peasant salad for lunch or dinner and take advantage of the flavors of the countryside at our table. 

The high nutritional value of this delicious salad is unique. It provides us with protein, fiber, omega 6 and 3 thanks to the Quinoa. 

Thanks to the purple cabbage we have a source of energy, vitamins and minerals that will keep us active during the day.
