So basically, if you're using the Bitshares' 'distributed' exchange to trade+store open.* tokens, then its actually more like an normal exchange than a decentralized one, in the sense that, for those open.* tokens, you're still basically trusting some company that is claiming to hold the assets for you in some form? I'm just trying to get my head around how it works and thus how good an alternative it is vs normal exchanges ...

That's exactly right. The benefit of OpenLedger is that its order books and order matching are fully auditable, because they're all executed on the Bitshares blockchain. But if you hold OPEN.* assets, you're trusting someone else to take care of your stuff, just as if you're holding BTC on Poloniex.
