Lubina de estero // Sea bass
Los terrenos cercanos a las localidades de San Fernando, Chiclana, puerto Real y El Puerto de Santa María en la provincia de Cádiz, están rodeados de canales de agua de mar donde las mareas controlan las corrientes. Por todos estos caños hay esteros construidos donde por la acción de las mareas se llenan de agua y por medio de trampillas se regula para mantenerlos llenos, donde se ha extraído sal desde tiempos remotos.

**The lands near the towns of San Fernando, Chiclana, Puerto Real and El Puerto de Santa María in the province of Cádiz are surrounded by seawater channels where the tides control the currents. Paralelamente al negocio de la sal están los esteros dedicados al pescado. En ellos se crían prácticamente en libertad gambas y camarones que se alimentan de la amplia variedad de invertebrados que viven de forma natural en ellos. Además de las gambas se pescan las lubinas. Es un pescado voraz donde se alimenta de los camarones.

Las lubinas tienen total libertad para moverse, criar y cazar hasta que son pescadas para venderlas en los mercados. Su precio es superior a las lubinas de las piscifactorías pero inferior a las salvajes pescadas desde la playa. Su precio ronda los 13 Euros el kilogramo pero el sabor es mucho mejor al tener una alimentación natural y no de piensos.

**Sea bass have complete freedom to move, breed and hunt until they are caught for sale in the markets. Its price is higher than the sea bass from the fish farms but lower than the wild ones fished from the beach. Their price is around 13 Euros per kilogramme but the taste is much better as they are fed naturally and not on feed.**

Estas dos lubinas las voy a cocinar con ayuda del horno. Antes pongo una cama de verduras. Pimientos, tomates y patatas. Les pongo con aceite de oliva, sal y pimienta molida media hora antes para que se hagan bien y no queden crudas.

Pasado ese tiempo coloco el pescado limpio de escamas, aletas, cola y tripas. Le aporto algo de sal y las coloco encima de la verdura.

Si el horno es muy potente se le puede echar un chorrito de vino blanco al pescado para hidratarlo y se haga algo más lento. Con ello nos aseguramos que salga bien cocinado y jugoso.

**If the oven is very powerful, you can add a splash of white wine to the fish to hydrate it and slow it down a little. This ensures that it comes out well cooked and juicy.**

El tiempo estimado de horno a 160 grados centígrados para este pescado es de unos 20 minutos. Un truco es ver el color de los ojos. Si están blancos, seguramente el pescado está en su punto. Me gusta limpiarle las raspas a los platos de mi familia en la cocina, por lo que les dejo la comida lista para comer sin problemas de espinas. O al menos lo intento.

**The estimated baking time at 160 degrees Celsius for this fish is about 20 minutes. One trick is to check the colour of the eyes. If they are white, the fish is probably done.
