<p>Every single chef or baker in the world is an owner of intellectual property or trade secrets. Simply by working for a large corporation such as Country Grocer as an entry level baker you will be thought things which cannot be shared without making it your own.</p>



<p>Our recipes often being protected by law are not the only thing of concern but also the process. Simple things many would not consider can make the difference for the end product. Something as simple as white bread can be elevated to the ranks of Artisan merely by adjusting the process.</p>



<p>Due to the nature of baked goods being a balancing act of chemistry and physics for every adjustment there is always a counter balancing adjustment necessary. This brings me to the title of this post “Nothing More Than Artisan White Bread<strong>”</strong> ... did you know sour dough is the original “White Bread”?</p>

<p>When producing a plain old white dough I bet you will often find it to be bitter or void of flavour. Simple neutralizing efforts in processing can greatly enhance the flavour profile. Sour dough is created from white bread by letting it ferment and turn sour but there is a acid that isn’t so sour easily taken advantage of. Lactic acid develops slowly giving a nutty flavour compared to sour of acerbic acid which can be developed quickly.</p>

<p>Mix a sponge(stiff dough flour/water/salt/yeast)keeping the yeast low and salt high to slow the yeast down further. Without sugars the yeast will be forced to break down and consume the wheat proteins which produce more yeast burps(lactic acid) then farts(acidic acid) ...</p>

I was half expecting this to be weed related, lol. 'baked' 'rolls' it almost writes itself, hahaha. 

Now this made me want to actually bake instead of... you know, getting baked. Anyway sour dough is the best imo !tip

Lol I was kinda surprised by my own writings for this one ... was like being suddenly pulled back into the baker mindset  ...

Have you tried a Spelt Sourdough? Spelt is a type of ancient grain, always whole grain and generally a weak flour so can be difficult like a rye dough. It's on the lighter side for sour and the whole grain flour tends to bring in the nutty/earthy profile of lactic acid. I think this is the best of all sour but has to be done right otherwise it will be doughy rather then chewy.

Now all time best imo has to be what I know as prima pane which I think is translated as premium bread. Basically in old school wood ovens, they heat up then clean out then bake all day long. They often use semolina or corn meal as "lube" so loaves pushed around with the wooden paddle don't stick. The burnt semolina & cornmeal floating around the oven shelves is scrapped up end of day and ground into a "premium additive" for a very quick bread version of sour ... super cheating sour flavour profile but the roasted flour and meal levels out the acidity(faster the sour the more acidic) while maintaining all flavour. I remember it as “premium pain in the ass” 😆

Your welcome lol I have a wealth of knowledge up der somewhere just need to get hands on I think for the finer details to come back to me 😅

German sour ... soft ploosh and sloppy dough if I remember correctly ... going way back originally made in giant vats and the mix was done by hand thus the reason for being more liquid to start with 🤔
