Bolognesa de lentejas y aceitunas // lentil and olive bolognese
Feliz noche amigos espero que se encuentren bien y pasen un genial fin de semana, hace tiempo quería probar hacer una bolognesa con proteína de soya pero les confieso que por más que busque en los supermercados no encontré este ingrediente que antes encontraba muy fácilmente, entonces se me ocurrió usar lentejas como base a la preparación que quería hacer y fue un total acierto la combinación de los ingredientes con las lentejas fue increíble así que agradezco arriesgarme a preparar este platillo usando las lentejas como base ya que me gustó mucho más que cuando la prepare con proteína de soya , les dejo los ingredientes y el paso a paso de esta bolognesa de lentejas y aceitunas.

Ingredientes:
• 150 gr de lentejas
• Una cebolla blanca
• Una zanahoria
• Un ají margariteño
• Un tomate grande
• 10 unidades de aceitunas
• Una rama de cebollín ( la parte verde )
• Una taza de agua 
• Una rama de orégano fresco
• 5 hojas de albahaca fresca
• dos cucharadas de aceite vegetal
• Adobo ( al gusto )
• Sal ( al gusto) 

>Ingredients:
• 150 gr of lentils
• A white onion
• A carrot
• A margariteño pepper
• A large tomato
• 10 units of olives
• A branch of chives (the green part)
• A cup of water
• A branch of fresh oregano
• 5 fresh basil leaves
• two tablespoons of vegetable oil
• Marinade (to taste)
• Salt (to taste)

Para esta receta deje remojando los 150 gramos de lentejas por una hora para que suelten un poco el sabor amargo que tienen por naturaleza, luego de una hora les retire esa agua y las seque un poco con una toalla limpia de cocina .

Colocamos a cocinar el tomate enteró por unos 3 min , luego procedemos a retirar la piel y cortarlo en cuadros pequeños, si desean también pueden llevarlo a la licuadora pero en lo particular me gusta más de esta manera.

Luego vamos a lavar y cortar en cuadritos pequeños la cebolla blanca, el ají retirando las semillas, el cebollín en este caso solo utilicé la parte verde , y la zanahoria.

En un caldero agregamos dos cucharadas de aceite vegetal y llevamos a rehogar la cebolla , la zanahoria, el ají y el cebollín juntos a las lentejas que previamente colocamos en remojo , dejamos rehogar a fuego bajo por unos 10 min hasta que la cebolla este transparente.

Luego agregamos el tomate y un poco de orégano fresco, agregamos una taza de agua un poco de adobo y dejamos cocinar a fuego mínimo por 40 min .

Pasado los 40 min agregamos las aceitunas en rebanadas y la albahaca fresca , mezclamos y dejamos cocinar unos últimos 5 min y apagamos , podemos terminar con un toque de sal para realzar los sabores.

Me gusto mucho los sabores que logré con este plato quedó perfecto para acompañar una pasta y una copa de vino o simplemente para disfrutarla sola , sin duda una de las maneras favoritas de preparar las lentejas de ahora en adelante.

Me gusta mucho tu receta. Últimamente la verdad tampoco he visto tanto la soya como se vio hace un tiempo, la verdad no mucha gente la sabe preparar, y entre eso y que la carne ya está más accesible (porque muchos la usaban solo por no poder comprar carne) debe haber bajado la producción. La opción con las lentejas es genial, los granos hechos más guisados que tipo sopa que es como uno acostumbra, aporta mucho más sabor y llenan un montón!
