El higo es una fruta exquisita y pulposa que se da con mayor facilidad en los climas fríos y húmedos, en la cuidad donde vivo no es común ver una higuera cargada por lo que me sorprendió mucho encontrar estos higos.<br></br>

Hace poco cambie de supermercado y en el nuevo  he sido sorprendida gratamente porque tiene mejores precios al que iba con regularidad y también porque he encontrado fruta y otros productos que tenía mucho tiempo que no veía.<br></br>
 
El higo es uno de ellos y en lo que los vi no dude en comprarlos para preparar un buen dulce criollo de higos verdes. La fruta como tal tiene su versatilidad dulcera, sin embargo,  en su forma natural,  bien maduro posee un  sabor dulce-acido y una suave textura que es muy sabroso.<br></br>
 
En cuanto a la dulcería se utilizan verdes y con ellos se preparan: Higos en almíbar, Higos rellenos con dulce de leche y tartaletas rellenas con una mermelada de higos y adornadas con lajas de la fruta también en almíbar. <br></br>

De todas estas versiones, el único que sé preparar es el dulce de higos en almíbar. La verdad es que lleva su trabajo pero su sabor único y exquisito es todo un regalo para el paladar. Así que te invito a prepararlo para que disfrutes este manjar Criollo.<br></br>

# Ingredientes<br></br>

1 kg de higos verdes
1 kg de azúcar
2 lt de agua. 
 
# Procedimiento<br></br>

1.- El higo está cubierto por una pelusa que no se siente por lo que hay que limpiarlo muy bien, para ello lo mejor es usar un trozo de lija de agua de grano suave,  puede ser 360.<br></br>

2.- Frota fuertemente con la lija toda la superficie del higo, una vez terminado este proceso lávalos muy bien.<br></br>

3.- Ahora procede a quitarle la punta y por el otro extremo, con el cuchillo, realiza un corte en forma de cruz. <br></br><br></br>

4.- Una vez terminado este procedimiento enjuagamos muy bien y en una olla con agua que los cubra los llevamos a fuego alto por 5 minutos.<br></br>

5.- Pasado el tiempo los bajamos del fuego, los enjuagamos muy  bien bajo el chorro y repetimos este paso, es decir, los volvemos a llevar al fuego hasta que hierva y los dejamos allí por cinco minutos más o hasta que al pincharlos con una aguja esta los perfore fácilmente. <br></br>

6.- Transcurrido  el tiempo y hecha la prueba de la aguja los volvemos a enjuagar bajo el chorro y los dejamos que enfríen y se puedan manipular.<br></br><br></br>

7.- Mientras esperamos llevamos un caldero grande a fuego alto, agregamos los dos litros de agua y el azúcar, con una paleta vamos removiendo hasta que el azúcar se disuelva.<br></br><br></br>

8.- Una vez que los higos estén a una temperatura que los podamos manipular los exprimimos con suavidad,  cuidando de no deformarlos. <br></br><br></br>

9.- Al terminar de exprimirlos los incorporamos a la mezcla de agua y azúcar. Dejamos que hierva manteniéndolo a fuego alto por espacio de media hora. <br></br>

10.- Pasado este tiempo lo llevamos a fuego bajo y lo dejamos durante aproximadamente dos horas y media o hasta que se forme un almíbar espeso. Mientras esto sucede vamos removiendo con cierta frecuencia. <br></br> <br></br>

12.- Podemos servirlo solo o con galletas saladas y queso blando.<br></br>

Figs are an exquisite and pulpy fruit that grows more easily in cold and humid climates. In the city where I live it is not common to see a fig tree loaded with figs, so I was very surprised to find these figs.<br></br>

I recently changed supermarkets and in the new one I have been pleasantly surprised because it has better prices than the one I used to go to regularly and also because I have found fruit and other products that I had not seen for a long time.<br></br>
 
Figs are one of them and as soon as I saw them I did not hesitate to buy them to prepare a good sweet Creole green figs. The fruit as such has its sweet versatility, however, in its natural form, well ripe it has a sweet-acid flavor and a soft texture that is very tasty. <br></br>

In terms of confectionery, green figs are used to prepare: figs in syrup, figs filled with dulce de leche and tartlets filled with fig jam and decorated with fig slices also in syrup. <br></br>

Of all these versions, the only one I know how to prepare is the fig jam in syrup. The truth is that it takes some work but its unique and exquisite flavor is a real treat for the palate. So I invite you to prepare it so you can enjoy this delicacy. Creole.<br></br>

1 kg of green figs
1 kg of sugar
2 lt of water.<br></br> 

# Procedure <br></br>

1.- The fig is covered by a fuzz that cannot be felt, so it is necessary to clean it very well, the best way to do this is to use a piece of water sandpaper of soft grain, it can be 360.<br></br>

2.- Rub strongly with the sandpaper the whole surface of the fig, once finished this process wash them very well.<br></br>

3.- Now proceed to remove the tip and at the other end, with the knife, make a cut in the shape of a cross. <br></br><br></br>

9.- When we finish squeezing them we add them to the mixture of water and sugar. We let it boil, keeping it on high heat for half an hour. <br></br>

Este dulce con queso, es una verdadera delicia 😋 justo en estos días comía conserva de guayaba con queso y mencionaba que con dulce de higo era mejor, no sabía cómo se preparaba y es bastante buena está explicación 😁 muchas gracias 😊🤗

Hola Damaris, que rico es el dulce de higo. La imagen me trae recuerdos. En mi infancia, vivia en Maracay, y mi madre era ama de casa, pero preparaba dulces de higo y de lechoza para vender y generar algo desde casa. La rotacion del dulce de lechoza era mayor al de higo, y yo tendria unos 7 u 8 años. Llego una vecina a comprar dulce de lechoza, y mi mamá le dijo que le quedaba de higo, entonces, la sra le dijo que le vendiera uno de higo. Pero yo sali corriendo y traje uno de lechoza. Que era el que queria la sra. Eso ha sido una anecdota de chalequeo para toda mi vida, por estar de metio!
