We're doing a pretty huge catering this tomorrow and Sunday and we're having lotsa fun preparing for this catering in particular because we're doing lotsa food that we normally don't get catered for. People normally get us for our signature burgers and panini sandwiches but this time we're doing a custom catering which involves lotsa local cuisine as well as rice dishes. We have some wraps, kebabs and burritos which we're familiar with but asides from that, we're doing lotsa local stuff. Some of those stuff include local mini dessert pastries, *'nasi lemak'*, chicken rice, poke bowls, fried noodles, and fried rice.  Yesterday we made fried shallots which will be the topping for the poke bowls. A really local twist and added Asian flair to the salmon poke bowl which I'll have more pics of it and the other food that we'll be serving in coming posts. To make this, you finely slice shallots and then fry it in a considerable amount of oil, well until all of the shallots are submerge but not deep frying level of oil. Fry it on a medium to high heat and constantly stirring as not to burn them. After about 5 minutes it'll turn golden brown. Make sure you turn off the heat just before it's fully done so that you avoid burning any while removing them from the oil. Here I use a kitchen towel to dry them and leave them to cool before storing them. The results you get is a super fragrant and crispy fried shallots that's ultra delicious to say the least. I'm thinking of using this for even my burgers as an extra texture and flavor. I'm sure it's gonna be superb in a burger.
