**I wish you an excellent evening friends of food and desserts of good seasoning, I hope everyone is well in this community #hivefood, today I want to share with you a new recipe and participate in the proposal of the friend @maryed [Initiative](https://ecency.com/hive-100067/@maryed/esp-o-eng-initiative-a-gluten-free-food)(this initiative is to celebrate and make a gluten-free meal, in honor that every January 13 is celebrated the day of the *Food-Free-Gluten*. I decided to participate with a delicious stuffed chicken with olives, capers, raisins and BBQ sauce, the chicken is the protagonist of this very healthy recipe, it has nutritious ingredients and nutrients, it is noteworthy that for its filling, I used olives, capers and raisins, which I had left over from last December and I decided to participate, I am also adding to my daily diet nutritious, healthy and gluten-free meals.**

**Gluten contains proteins that cause damage to our body and some people are more prone than others and may suffer from celiac disease, we here at home, we have no problem eating and tasting foods containing these proteins, but it is important to know what foods contain it, I had never paid attention to this issue, but with this initiative I started to investigate what it is and I found that foods such as "wheat" to mention one, contains low nutritional value and is not essential to the daily diet. It is important to note that those who suffer from celiac disease, should consume fruits, vegetables, meat, fish, poultry, eggs, beans, nuts, seeds and dairy products, I also want to mention that I am very happy that there are many and varied foods on the market, free of gluten to facilitate and make people who suffer from this disease can enjoy the different preparations and to pamper themselves and take care of their health.**

**Here is my gluten-free recipe**:

Decidí participar con un delicioso pollo relleno con aceitunas, alcaparras, pasas y salsa BBQ, el pollo es el protagonista de esta receta muy saludable, tiene ingredientes nutritivos y nutrientes, cabe destacar que para su relleno, utilicé aceitunas, alcaparras y pasas, que me sobraron del pasado mes de diciembre y decidí participar, además estoy agregando a mi dieta diaria comidas nutritivas, saludables y sin gluten.

>El gluten contiene proteínas que causa daños a nuestro organismo y algunas personas son más propensas que otras y pueden padecer de celíaca,  Nosotros acá en casa, no tenemos problema alguno en comer y degustar alimentos que contengan estas proteínas, pero es importante saber cuáles son los alimentos que lo contienen, nunca le había puesto atención a este tema, pero con esta iniciativa me puse a investigar de que se trata y he encontrado que los alimentos como el "trigo" por mencionar uno, contiene bajo valor nutricional y no es indispensable para la dieta diaria. Es importante destacar que quien padece de celiaca, debe  consumir frutas, verduras, vegetales, carne, pescado, aves, huevos, frijoles, nueces, semillas y productos lácteos, también deseo mencionar que me contenta bastante que existan muchísimos y variados alimentos en el mercado, libres de gluten para facilitar  y hacer que  las personas que padecen esta enfermedad puedan disfrutar las distintas preparaciones y poder consentirse y cuidar su salud.

**Our chicken stuffed with olives, capers, raisins, ham and cheese is ready, I served it with a Christmas type chicken salad, friends, the combination of flavors was great, healthy, delicious, juicy and we can eat it at lunch or dinner, being well fed, and without fear that we can get the gluten proteins.** 

**This recipe yielded 8 servings, slices of stuffed chicken.**

Ya esta listo nuestro pollo relleno con aceituna, alcaparras, uvas pasas, jamón y queso, lo serví con una ensalada de gallina tipo navideña amigos, la combinación de sabores quedó estupendo, sano, delicioso, jugoso ya podemos comerlo en el almuerzo o la cena, quedando bien alimentados, y sin temor de que podamos obtener las proteínas del gluten. 

Para esta receta salieron 8 porciones, rodajas de pollo relleno.
