Confession: I had not heard the word β€œspatchcock” before. Spatchcocking your turkey means butterflying it so that the bird can be cooked more evenly. Apparently, it’s the best way to cook the turkey and keep it moist and tasty.

Totally makes sense - thorough cooked and crispy.  I've not heard of that term before....only butterflying a bird...which when you think of it makes no sense. ...can a butterfly be birded then?  Oh the possibilities :)
