A tribute to the best neiburgh one can have and who makes the jummiest homemade christmas cookies, this one on the picture was a present from her, it is called "Linzer Schnitte" and it tastes so fine, hard to describe.
It's filled with jam, and each piece has a lovely different decoration motive.

It's **Khaman** also some people say it Dhokla. It's a specialty of my city and the most famous snacks here which people like to take in holidays. Here people stand in queues since morning while holiday as they like to start their day with it. I too on Sunday and holiday start may day with eating it. It's made from gram flour, and it's healthy too. My city specially known for food and this one is the most popular item.

It is a pleasure to participate in this contest. Today I want to share a little about what we eat at Christmas. You cannot miss the Hallacas, ham bread, pork leg and a delicious cake.

This is a delicious recipe for potato soup that I got from a fire camp in northern Idaho, the center of potato growing in the United States. It is absolutely perfect for cold winter days and especially Christmas dinner. I took this picture of the recipe the minute the camp cook gave it to me, just in case I lost the paper (which I have, of course). I haven't written it down yet, but eventually I will 😊

***Ceremony Fried Rice***
I prefer to call it the **"special fried rice".**  Just like the Nigerian jollof rice, this is a meal that you can find in almost every party and in every home during the festive periods. It is a meal that contains many vegetables which are known to be antioxidants, best for health. The special fried rice is also rich in good carb and it can be cooked with any protein of your choice. Here, I have chicken as the protein and it gives the meal a really nice look. I hope you all have something as nutritious and tasty as this for Christmas.😊

This is a picture of some cranberries, they are soaking in a mixture of sluggard delight and water. This is a recipe that I created, it is quick and easy to make and you can use any variety of cranberries, as well as other fruits.

#### *Christmas Chin-Chin*
In Nigeria, we have a kind of official crunchy, deep-fried Christmas snack called chin-chin. Most households make a ton of this snack and serve it to guests, friends and family in the season celebration.

It's simple and fast to make. The **ingredients** are: plain flour, margarine, sugar, eggs, evaporated milk (for crunchy texture), nutmeg, and vanilla extract 

**Instructions:**
1. Mix the flour, sugar and nutmeg together. 
2. Add in scoops of the margarine and mix together with clean hands until it looks like crumbs. 
3. Break the eggs into the crumbs, add the milk and mix. Knead into a dough. 
4. Let your dough rest for like 15 minutes. 
5. Cut small bits of your dough, knead into a thin flat shape and cut into small cubes. 
6. Heat your vegetable oil and fry. 
7. Serve and enjoy. Merry Christmas! 🎄

I don't see any holiday drink in here yet so, i'm going to make my first participation with the recipe for "Ponche Crema", it's the venezuelan take on eggnog! There are many ways to prepare it, but the one i like is made like this: 
<div class="text-justify">1 can of condensed milk, 1 1/2 cups of liquid milk, 3 egg yolks, 1 tsp of cornstarch, 1 cup of rum, half a lemon peel, cinnamon, nutmeg. Preparation is quite easy! In a saucepan place the condensed milk, liquid milk, lemon peel, cloves and cinnamon, stir and heat without letting it boil.
In a small bowl place the egg yolks and add the teaspoon of cornstarch and mix well.
When the milk is hot, add a cup of this mixture to the yolks with the cornstarch and mix quickly, this process is known as tempering the yolks. Add that mixture of eggs and milk to the rest of the milk and continue cooking over medium heat and stirring constantly until the mixture thickens.
Remove from the heat and let it cool for a few minutes. Strain the preparation to discard all the spices. Add the rum and stir; taste the desired amount of liqueur.
Allow to cool and bottle in glass bottles. Serve chilled and enjoy!</div>

Being a caterer, I make several delicacies for household and events. This Christmas isn't an exemption.
I'd be sharing recipe for Nigerian jollof rice
Materials:
-Rice
-Tomatoes (Fresh or paste)
-Chicken
-Spices(garlic, ginger, nutmeg, curry, thyme
-Onions
-Pepper
-Salt
-Seasoning cubes
-Vegetable oil

Procedure
1. You'd have to cook your chicken first as the stock would be necessary for this meal.
After washing your chicken properly, season with chicken seasoning of your choice,garlic, ginger, pepper, nutmeg, curry, thyme, seasoning cubes, salt then add adequate water based on the quanity of your chicken and allow to boil. After which you can choose to fry.
2. Next we'd prepare our tomato sauce or gravy
Based on the amount of gravy you need, put vegetable oil in the pot( A big can of tomatoes, 1ltr of veg. oil would do). Allow the oil to heat, put a little salt in the oil, add onions and oil to fry. Turn your tomatoes into the oil either paste or blended fresh and stir. You continue stiring to avoid the paste from getting burnt. Add all your seasonings to taste and allow the tomatoes to fry for about 20-30mins depending on the quanity and amount of heat.
3. To the rice proper, I'd like to parboil my rice first,so I can reduce the quantity of starch. Allow water to boil, then add your preferred amount of rice and allow to boil for about 30 mins, then you sieve out the water and rinse your rinse with clean water. If the oil in your gravy is not sufficient, you can decide to topup a little oil in your put and fry onions before adding the gravy, if otherwise pending on the tenderness of your parboiled rice, add water to pot, add your preferred quantity of gravy- the gravy gives the rice it's reddish color so the quantity of gravy you put would determine the color of your rice,so avoid making it too little or too small. Then season to have taste, you would like to make your seasonings of your stock a little too much because of the rice. This would allow for the rice to taste when added to the stock and don't forget to also add your chicken stock.
To your boiling stock, add your rice and allow to cook until the rice is tender enough and the stock completely dried.
Your Nigerian jollof is ready,as you can garnish with extra onion, vegetables and even served with salad and cool drinks.
