In today's post, we will focus on the production method.
Like every tea in the world, it starts with the growing of Camelia Sinensis. Due to the lack of space, Japanese farmers usually work on small plots of land and regroup in cooperatives to process the leaves. It also happens that farmers process their own leaves, but it is not that common.

Comme pour tous les thés existant, le processus démarre avec les plantations de Camélia Sinensis. En raison du manque d'espace, les agriculteurs japonais travaillent habituellement sur de petites parcelles et se regroupent en coopératives pour traiter et vendre les feuilles. Il arrive que certains producteurs transforment eux même leurs feuilles mais cela reste plutôt rare.

The main difference with the other types of Japanese teas like sencha is that the trees are shaded for roughly 1 month before the harvest. Since there is less light available for the leaves, the tree will produce a lot of chemical components in the leaves to compensate. Among these substances, there are various amino acids responsible for the rich umami flavor that matcha lovers look for!

To be totally accurate, other Japanese teas require shading like Gyokuro but for a shorter duration. Usually, shading is not done for sencha but nowadays, tea farmers shade high-quality sencha bushes to darken the green color and enhance the umami taste. However, they use plastic tunnels to wrap the trees instead of the proper straw shading used for high-quality matcha, or I should say "tencha".

La réduction de la quantité de lumière reçue par les feuilles force le théier à produire davantage de composés chimiques pour compenser. Et parmi ces substances, se trouvent de nombreux acides aminés responsable du goût umami prononcé du matcha!

>Pour être tout à fait exact, d'autres thés japonais ont recours à l'ombrage. Par exemple, le gyokuro est ombré pour une durée un peu plus courte que le matcha, cependant c'est surtout sur la méthode de fabrication que la différence se fait. Depuis quelques années, les producteurs se sont mis à ombrer les plans destinés à la confection de sencha haut de gamme pour leur donner une couleur plus sombre et un goût umami plus prononcé. Cependant, ils couvrent les plants avec un tunnel de plastique noir et non pas avec les structures traditionnelles en paille utilisées pour la production de matcha ou plutôt devrais-je dire de "tencha".

Indeed, the word matcha exclusively refers to the powder. When the leaves are harvested, the tea is called "tencha". These leaves are simply dried without additional process (rolling, curling...). They are packaged and left to rest for at least a few weeks before being stone-ground. This step takes a lot of time: it takes around 1 hour to produce 50g of powder. There are mainly 2 reasons. First, matcha powder is extremely fine ( grains measuring 10-20µm), and second, the mill must stay cold to avoid altering the flavors of the tea.

This way of processing is directly inherited from the antique Chinese way. A few posts earlier, we saw that when tea was imported to Japan, it was in the form of tea bricks. These bricks were then broken into small bits and boiled in water. A few centuries later (around the 10th century), new techniques were developed and consisted in reducing the tea bricks into a fine powder and then whisking it into hot water to make tea. Matcha is one of the last teas conserving this tradition.

Les feuilles sont simplement séchées dans étapes additionnelles comme il y en a dans la production des autres thés japonais. Les feuilles sont mises de côté à reposer pendant quelques semaines avant d'être réduites en poudre dans un moulin à pierre. Cette étape prend beaucoup de temps, en effet il faut environ 1h pour fabriquer 50g de poudre. Il y a principalement 2 raisons à cela: premièrement il faut réduire les feuilles sèche en une poudre extrêmement fine (taille des grains : 10-20µm), et deuxièmement le moulin doit impérativement éviter de chauffer pour ne pas altérer les arômes du thé.

>Ce procédé est directement hérité des pratiques de la Chine antique. Il y a quelques jours, nous avons vu que lorsque le thé a été importé au Japon, cela a été sous forme de briques compressées. Ces briques étaient alors broyées grossièrement puis bouilli. Quelques siècles plus tard (aux alentours du 10ème siècle), de nouvelles techniques se sont développées et les amateurs de thé ont commencé à réduire les briques de thé en fine poudre avant de les fouetter dans de l'eau chaude pour faire du thé. Le matcha est l'un des derniers thés à conserver cette tradition.
