 泥鳅富含大量优质蛋白质和其它营养素，比虾类鱼类营养都要多，所以现在它价格也是比较高的。 在我记忆中灰鳅要比黄鳅好，因为烧起来更糯。想必肯定不止这两种。 准备食材：泥鳅、生姜、大蒜、葱段、料酒、生抽、老抽、十三香、糖、油。 1）泥鳅杀好洗净隔干水份，生姜大蒜切好，葱切段。   2）起锅倒油，炒菜的量多一点，油热了倒入泥鳅煸炸，偶尔翻一下。 3）炸至表面起皮了放入生姜大蒜一起煸，倒入料酒煸炒，再依次放入生抽、老抽。放少量的水盖上盖子煮。 4）开盖放入少许十三香、少许糖，翻炒入味后撒上葱焖一会就可以出锅啦！  泥鳅吃起来有点麻烦，细骨头很多，所以要小心点哦！
