毛豆是上月初全部收成的,如果不收再养下去就会黄老了,所以一次性全拔了,一家子把它都剥出来,工程浩大,花了大半天时间。

重点知识:毛豆全剥出来后拌上冷却的熟油,然后一盘一包把它分好扎好,放到速冻里,烧时取一包,毛豆和刚放进去一样好。

准备食材:毛豆、虾皮、鸡蛋、盐、鸡精、油。

1)起锅倒油,炒菜的量稍多一点,先下毛豆炒七成熟,再把虾皮放入一起炒。
2)放入少量盐和鸡精,如果是淡虾皮就正常放盐,提前用个碗把蛋打成蛋液。
3)把蛋液均匀倒入毛豆里,不动等蛋液不太能流动了开始翻炒,这样蛋块就很碎小,是我要的样子。
4)把大部分的装盘,剩下小部分给小宝炒个炒饭,炒开炒均匀就可以了。

我炒这个是拿来配粥的,换换口味吧!
