今天烧了几个菜,吃得油滋滋的,有白切猪舌,油辣猪耳朵,还有炒莴笋叶,最麻烦的是这红烧素鸡了。

素鸡一般不会买来烧的,要大油锅炸的,之前有炸过鸡米花的油,所以看在油的份上买了一斤素鸡回来煮红烧的。

首先要把素鸡切厚片,油锅可以烧上了(热锅冷油不会粘锅)再用水冲一下素鸡后沥干水份。等三成热就可以下素鸡了,一面炸好炸另一面,这时准备一盆开水,把两面炸好的素鸡放进去泡,不出一分钟素鸡表面就皱巴巴的,把所有素鸡都炸好后全部放热水里泡,让它们吸饱水。把油倒出,倒入泡好的素鸡和热水,开火烧,放入生抽、老抽、盐巴、一点点糖炖5分钟,一大把葱增香可以出锅了。

汤汁饱满,一口下去能爆汁的感觉,红烧配饭最好了,吃了一碗饭,满足啊!
