Algunos días atrás les compartí la forma en la cual obtuve *Aquafaba*, que no es más que el líquido de cocción de las leguminosas, siendo el más usado el que proviene de los garbanzos, por su sabor neutro y su color claro. Luego de tener este líquido presto para realizar algunas recetas, llegó el momento de decidir qué podría cocinar con él. Algo que entendí claramente, luego de hacer mis investigaciones sobre este líquido, fue que uno de los usos principales del *Aquafaba* es sustituir al huevo en ciertas preparaciones y una de ellas es la mayonesa, entonces decidí que esa sería la primera receta con la cual probaría el *aquafaba* como ingrediente.

Esta mayonesa es una de las tres preparaciones que hice con *aquafaba* y es la que resultó como esperaba, quizá en otra publicación les cuente sobre las otras dos, sé que no quedaron como yo quería por algunos errores de mi parte, pero así es como se va aprendiendo qué funciona y qué no en tu cocina.

>This mayonnaise is one of the three preparations I made with *aquafaba* and it is the one that turned out as I expected, maybe in another publication I will tell you about the other two, I know they did not turn out as I wanted because of some mistakes on my part, but that is how you learn what works and what does not work in your kitchen.

Para preparar esta mayonesa utilicé un cuarto de taza de *aquafaba*, que coloqué en un bol junto a una cucharadita de mostaza, una cucharadita de vinagre de manzana, sal al gusto y media taza de aceite.
>To prepare this mayonnaise I used a quarter cup of *aquafaba*, which I placed in a bowl along with a teaspoon of mustard, a teaspoon of apple cider vinegar, salt to taste and half a cup of oil.

Luego de agregar estos ingredientes bastó con procesarlos con una batidora de inmersión, así mágicamente obtuve una mayonesa espectacular. A esta mayonesa puedes agregarle otros ingredientes de tu preferencia para saborizarla a tu gusto, por ejemplo ajo rallado, cebollín o perejil. La mayonesa que obtuve fue bastante fluida, pues así la quería, en caso de querer una mayonesa más espesa solo se tiene que agregar más aceite, todo dependerá de tu gusto.

>After adding these ingredients, all I had to do was process them with an immersion blender, and I magically obtained a spectacular mayonnaise. To this mayonnaise, you can add other ingredients of your preference to flavor it to your liking, for example, grated garlic, chives, or parsley. The mayonnaise I obtained was quite fluid, because that's how I wanted it, in case you want a thicker mayonnaise you only have to add more oil, everything will depend on your taste.

Mi sorpresa fue bastante grande al ver cómo el aquafaba emulsionó con los demás ingredientes, me pareció excelente poder tener esta alternativa para preparar mayonesa, más aún, porque una de mis leguminosas favoritas es el garbanzo, los preparo guisados tanto solos como con carnes, también en forma de falafel y ahora tengo una nueva alternativa gracias a los garbanzos.

>Mi sorpresa fue bastante grande al ver cómo el aquafaba emulsionó con los demás ingredientes, me pareció excelente poder tener esta alternativa para preparar mayonesa, más aún, porque una de mis leguminosas favoritas es el garbanzo, los preparo guisados tanto solos como con carnes, también en forma de falafel y ahora tengo una nueva alternativa gracias a los garbanzos.

Usar el líquido de una leguminosa para dar vida a una mayonesa es el mejor ejemplo de la cocina de aprovechamiento, nada se desperdicia, un máximo provecho con el cual se obtiene una estupenda salsa.
