Buñuelos de Yuca una tradición culinaria que no se puede olvidar

Saludo fraterno apreciados Hivers,  en mi post de hoy quiero compartirles una anécdota y una receta tradicional de mi país Venezuela que me trae muchos recuerdos de infancia. Hace pocos día participe en la iniciativa de @laradio donde la invitación era compartir golosinas y como nos endulzamos la vida, y allí justamente comentaba que cuando niña mis hermanos y yo fuimos criando bajo el exquisito gusto culinario de comidas dulces  caseros y muy poco era nuestro consumo de producto almacenados, si quieren saber un poco más como termina mi reciente relato  [aquí](https://peakd.com/hive-164868/@evev/reto-top5-semana-63-algo-que-compartir-golosinas-endulcemos-nuestras-vidas) les invito a visitarme.

Lo cierto es que desde ese día se me despertó un dulce recuerdo,  aprovechando que mi hermano hizo mercado y trajo muchas legumbre y hortalizas a casa, después de organizarlo todo mi mamá se preguntaba preocupada cómo hacer con tantas cosas para que no se dañaran, empezando por las hortalizas que no cabían en la nevera, le propuse pelarlas, cortarlas y luego embolsarlas para mantenerla en el refrigerador.

Entre las hortalizas de mayor cantidad que trajo mi hermano eran Yucas, y allí capte su mensaje subliminal; él es un fanático de los postres caseros y hace días yo había propuesto hacer Buñuelos pero faltaba ingredientes, artículos que en esta gran compra trajo y de allí le hice la invitación a mi madre  para preparar ***buñuelos de yuca*** ella un poco incomoda me dijo:  *¡Ay no eso lleva mucho trabajo!*,  y le dije que no se preocupara que con su orientación yo podía hacerlo y así recordábamos viejos tiempos de los dulces de infancia que nos hacían ella y las abuelas.

Entonces de este modo me dispuse a realizar los **Buñuelos de Yuca** a continuación les invito a seguir la preparación:

<h3>PROCEDIMIENTO: </h3>
Primeramente después de pelar las yucas y lavarlas muy bien las puse a hervir con suficiente agua hasta que quedaran muy blandas.

Luego en un recipiente muy grande comencé a colocar  los trozos de yuca para hacer un puré, no espere se enfriara mientras más tibio mejor, así estando blandas se puede ir integrando con más facilidad para hacer la masa.

Ya una vez triturada La Yuca con un tenedor , con las manos bien limpias comence a amasar agragandole el resto de los ingredientes: 2  yemas de huevo, la taza de azúcar, sal, ½ taza de harina de trigo y queso.

Después de amasar e integrar todos los  ingredientes hice arepitas y pase por harina de trigo para que compactara y deje reposar.


En otra caldero a fuego lento  agregue  el papelón, clavos de olor y canela con una taza de agua  y fui removiendo con una cuchara de madera, hasta que todos esos ingredientes se mezclaran haciendo así la gran  melaza que deja un olor delicioso en el ambiente.

Luego lo deje reposar para colarlo, ya que algunas veces el papelón trae grumos.

Con el aceite bien caliente en otro caldero, llego el procedimiento de fritar las bolitas o arepitas de yuca como en este caso yo las hice.

Después de estar bien doradas las retire de la fritura y coloque separadas en un recipiente para que escurriera el aceite, lo ideal sería colocarlas sobre papel absorbente que para el momento no tenía.

Una vez listo los buñuelos  serví calentitos bañados con la melaza de papelón y un poquito de queso como adorno sintiendo ese exquisito sabor entre lo salado y dulce que se percibe al degustar este tradicional dulces casero.

La verdad si me resulto laborioso preparar esta receta tradicional pero valió el esfuerzo todos en casa se han dado un gran gusto con los **Buñuelos de Yuca** que amorosamente logre realizar bajo la orientación de mi hermosa madre.

Esto se ve súper sabroso. Voy a intentar hacerlos. Siempre escucho hablar de los buñuelos de yuca pero nunca los he comido, debo estar perdiéndome de algo rico.
