My first attempt to make an Indian chicken curie from scratch.

I love Indian food but because so many ingredients are used it's just easier to go out and get it somewhere.

But I felt like trying to make one today.

I looked up a recipe online that looked decent and went to the shop with Bianca to go and get all the stuff.

It turned out that ingredient wise this recipe was probably the most complex I ever made but it was one of the easiest to prepare.

If you are wondering why I'm pointing to an empty pan...well...that's because for the first time ever I forget to take a picture of me with the food.

And by the time I realized it everything was gone!

It was yummy.

Now I understand that this probably is not the most authentic curry in the world so if any of you guys have any improvements, I'll gladly hear it.

# I don't think I ever used so many prep dishes. Ingredients: Crushed garlic, onion, curry powder, cinnamon powder, paprika powder, bay leaf, grated fresh ginger, sugar, chicken breasts, tomato paste, yogurt, coconut milk, cayenne pepper.

# Get a skillet or a large pot and put in some oil and fry onions until lightly brown.

# Next step is to dump in all the ingredients on the right, quickly one by one! And stir! for 2 minutes. (garlic, curry powder, cinnamon, paprika, bay leaf, ginger, sugar)

# I stirred everything together and then it looked like this. It had to simmer for 25 minutes.

# 25 minutes gave me plenty of time to clean the massive amount of prep dishes that I used and I also cooked some rice. 25 minutes later I added the cayenne pepper to the dish and let it simmer some more for 5 minutes.

# End result. I was so happy with the way I served the rice, but Bianca called it tacky :). Anyway, it tasted great! A lot of flavors and some good heat. For a first try, there was nothing wrong with this! But I have to be honest when I go out to get it, it's better...the flavors are way deeper and more complex when the pro's make it. Still, it was fun to try something new tonight!

Looks really good. What is amazing that you made it from scratch and didn't use a pre-packaged curry spice. Good for you! I think maybe the pros let it simmer longer for "happiness" of flavour. Also,  I think you can vary the amount of the different spices for a deeper flavour too. And when you have an excellent tasting curry, who cares about the rice?

I'm guessing you could deepen the flavor by letting it sit and then fry the onions , etc. Also how is crushed garlic compared to the powder? I might switch to that instead of the badia option instead. The curry looks great but I'm not good with too much heat so on a scale of 1-10 how spicy is it?

About 2. Not spicy at all (only the cayenne). I personally find that crushed garlic has more flavor than garlic powder.

Both my husband and my two sons are very keen cooks, and they do a brilliant job. Maybe it is because I do not like cooking, and they must have gotten tired of the limited dishes that I cooked when the boys were still at school. Now they are out of the home, and my husband soon realised that, if he wants to eat, he will have to cook. When the kids were at school, he would cook over weekends. Now he does it nearly every night, and he loves it. He says he especially likes my appreciation. I do not have to fake that, though, because he really makes gourmet food!

Sounds like a fairly mild curry given you had coconut milk in it. Believe it or not, that's actually a small number of ingredients to start with. But if you enjoyed it that's all that matters.

Indian Curry is the best, second probably is the Japanese curry :D The curry I tried in India is kind of watery and not that thick. I prefer thick texture tho as I can eat with Indian rice and naam bread (especially garlic flavor) :P

The real store is in NYC and I'm planning to swing by in the next day or two while I'm in town... there's a giant room with hundreds of spice blends for any Indian dish you could imagine. I'm not sure how easy/possible it is to order any of that online, but if you can, I'd highly recommend their Vindaloo blend (if you can handle spice) and the Tikka Masala was good too.

Of course! Spice blends, now that would save a ton of work. We have stores in Rotterdam that sell them. I'll check if they have this brand. I like spice, but spicy to a certain point. When I burn up and have to stop eating to drink milk or water is usually my limit :)

Hey exyle,
Just for some information it's called ***Murgh Makhni*** in India.
A quick tip also grind the ingredients after cooking on medium heat for a while then strain them,then put on heat the strained masala add curd and chicken in between.lastly served it with some dried fenugreek powder and heavy cream.

Oh, yes, fresh ground spices are so much better than powder. It adds to the cooking time, but certainly makes a difference! I've been doing Thai green curries recently, grinding up fresh galangal, garlic, chili, lemongrass, and basil all together - so much better than the pre-mixed pastes!

Looks nice. I do the same at home and make always a huge amount of the paste since this is a lot of work. I freeze the paste in small portions and it is then really easy to do a curry from scratch. Just add vegetables and coconut milk. The best one I have ever eaten. &#128522;

You never know how creative you can be until you try to put something together. I bet that next time you try this out, it will come out tastier and you will be some steps closer to being a pro. My mama always tell me that the secret to good cooking is following another person's steps but the secret to great cooking is finding out what method works best for you. This thing literally look like what my mom cooked when I was a child. It wasn’t Indian food, but it looked identical. Few years ago my neighbor from India cooked outside every weekend and I could smell their delicious food. For me it’s litle too much spices they are using, but overall it’s really good. You definately did an amazing job. I can smell your food just by looking at it.

This is exactly how my hubby cooks it. He is a very enthusiastic cook, so we have every spice that you can think of anyway. No need for us to go and buy all that stuff.

I have to disagree with you getting takeout, even though it is easier. Keep on trying, you will get better, and sooner or later you won't want the shop bought stuff!

My husband also adds *paneer*, a type of cheese that he also makes from scratch. Look up a recipe and try it. Paneer takes up the flavour of anything it is cooked with (I am talking about any kind of curry).

Looks amazing! I haven't done any Indian curries, but I do make my own Thai curry paste if you're ever interested in something like that I can shoot you a recipe. The work is in making the curry paste with the Thai dishes, once that's sorted the actual dinner is typically pretty easy.

You would have made my Middle School Cooking Teacher proud with how you measure out each ingredient and put them into their own bowls. 

I am SOOO bad about not doing this and unless I'm having the kids help I use my hand for measurement 99% of the time. I'm pretty accurate too, my Wife challenged me on this once and had me pour the ingredients into measuring spoons to double check everything. She gave up after I was almost dead on 5 ingredients in a row.

Have seriously considered doing it like you are showing here for my cooking posts, but then it's just so many more dishes to wash lol. But seriously I probably should be a little more professional about how I do it for my posts. 

You presentation is Great! and shows where I may need to make some improvements.

Kind of what I figured, need to add a little extra professionalism to the posts. Going to have to step up my game a little.

My kids love working with me in the kitchen, especially my 8 year old, and they tend to do a lot of the prep work on bigger meals with me. Heck a few meals they pretty much cook start to finish at this point and love that we have this as something we enjoy together.

Ha ha you add little spicy right! if we make we add more spicy and it's not an Indian style at all, we make it as Sri Lankan style! But never added Yogurt so far! That would be a new detail and i will definitely try that out! Nice to hear that you like Indian foods!

I noticed the amount of rice that was in your plate. It was just a cup full. It reminded me of what a doctor once told me. He had told that one should not eat more than a cup of rice in a day.  Anything more than that is harmful for health.
