MAKING THOSE FRESH HERBS LAST ...#Gardenjournal October 2022
**Greetings and Salutations!**

**Hello** to all my #hive friends.

It's been a challenging month or so, I have been very busy traveling back and forth to New Jersey to care for my youngest sister who has been very ill. The good news is she is recovering with the help of some very talented and dedicated professionals. 


Now onto the good stuff.

We have enjoyed an abundant growing season this year, lots of veggies, herbs, and flowers.@thebigsweed will fill you in on all the veggies, I want to brag about my herbs and flowers.

Harvesting fresh herbs is always a pleasant experience, just the fragrance as I pick the leaves is a joy. Today I went for lemon thyme, oregano, rosemary, garlic, and basil. Washing and drying is the first step to preserving fresh herbs for later use.

I freeze most of them in ice cube trays with olive oil.
.

The garlic was amazing this year, I always have a jar of minced garlic in the frig ready to go, and the rest of the crop is boxed and put into a dark, unheated closet, this will keep the garlic in good shape for months to come.

The sweet basil will be processed into pesto, then frozen in the tray, once frozen I vacuum seal the "cubes", very nice having those available in the winter. Rosemary goes right in the tray, covered in oil for what I call "Herb Bombs". If I am making chicken or potatoes, those herb cubes are the **bomb**.

With the weather cooperating, I will harvest again these same herbs, but the last harvest I will hang, and air dry them.

<center>**LAVENDER**</center>

I grow lavender every year but have never consumed it, I grow it for its delicate fragrance. 

It can be used in the bath for a relaxing soak, relieving stress and muscle aches. The leaves can be used in sachets to scent the closets and dresser drawers. It's wonderful in a diffuser for some aromatherapy. Making lavender oil takes time to make, you will need a large crop with lots of spikes with flowers, sunflower oil, and vitamin E. Starting with a clean, bone-dry mason jar, stuff in the dried flower buds, cover with sunflower oil add vitamin E oil, then top off with more sunflower oil. Tightly seal the jar and place it in a cool dark place, shaking the jar daily for about 4 weeks. Using a fine strainer or cheesecloth strain the oil of all debris. Now you can enjoy lavender oil on your skin to soften and soothe, in the bath or diffuser to help you relax and get a better night's sleep.

Unfortunately, I didn't have an abundance this year of flowers to make it worth the effort of making the oil, but I will harvest the rest of the leaves to make sachets for the closets.

Lavender is one of the most grown herbs from around the globe.

I grow all kinds of flowers, both annual and perennial plus I am surrounded by a forest that spits out wildflowers like crazy. It's a beautiful world #dswigle, #alwaysaflower.

I began this post about two weeks ago and since then, most of the summer
flowers are going, going gone.

I am happy to have a few fall flowers to go along with the beautiful landscape that surrounds us with the trees in full color.

This chrysanthemum was planted late last fall and I wasn't sure it would bloom again, it grew very little during the warm months but by late August I was excited to see some quick green growth then ta-da, little buds forming. Great color, right?

As much as I enjoy the summer growing season, it's a nice change having that great sleeping weather, cool at night, not sweating, not freezing, just right. 😌

Hey there @buckaroobaby how's it going? Everything here is on its way out, time to prune the roses hard, dress the bed with hay and tuck them in for the winter. The dead sunflowers are shedding their seeds and the birds are loving it. The fall colors in the mountains are beautiful here, really enjoy the fall, winter, hum? not so much.

It's great having those little herb cubes in my freezer, just pop them in soups or stews when frozen or defrost them to butter up a chicken or potatoes, DE-LISH.

Thanks so much, @jessiencasa so glad you enjoyed my little post. I enjoy tropical weather very much; we enjoy going south for the very cold winter months but I do love the change of seasons here in the north. The fall here in Upstate NY, USA is gorgeous this time of year.
