Hello dear community of Foodies Be Hive, I hope you are all well 😊. 
Today I bring you a delicious recipe to prepare an economical, easy, nutritious and very tasty dish, this is the traditional Mexican sopa aguada (in English “watery soup”) It is so called because unlike most soups (mainly European) that are usually more creamy and thick, this soup really has a much more liquid and abundant consistency, very close to a broth, but it is made with the usual ingredients of soups.

El día de hoy les traigo una deliciosa receta para preparar un platillo económico, fácil, nutritivo y muy rico, se trata de la tradicional sopa aguada mexicana. Se llama así pues a diferencia de la mayoría de las sopas (principalmente europeas) que suelen ser más cremosas y espesas, esta sopa realmente tiene una consistencia mucho más liquida y abundante, muy cercana a un caldo, pero esta elaborada con los ingredientes usuales de las sopas.

### Ingredients for a serving for 6 people 🥄👥. 
- 4 saladet tomatoes (about 400 gr) 
-One portion of onion 
- One large clove of garlic. 
- One package of wheat semolina pasta. 
- Approximately 100 gr of spinach leaves. 
- 1 medium carrot. 
- Chicken seasoning and salt.

>#### Ingredientes para una porción de 6 personas 🥄👥 
>- 4 jitomates saladet (aproximadamente 400 gr) 
>- Una porción de cebolla 
>- Un diente de ajo grande. 
>- Un paquete de pasta de sémola de trigo. 
>- Aprox. 100 gr de hojas de espinaca. 
>- 1 zanahoria mediana. 
>- Sazonador de pollo y sal.

>This is the Chicken seasoning that i will use 😊

- We will begin by washing and disinfecting the vegetables perfectly.
>- Comenzaremos por lavar y desinfectar perfectamente las verduras

- Then we remove the stalk from the tomatoes (that little dark button they have on top) with the help of a knife, we continue dividing them into 4 parts, so that it will be easier for the blender to grind them, as well as the onion, and we add them together with the garlic clove without the peel.
>- Posteriormente le retiramos el pedúnculo a los jitomates (ese botoncito oscuro que tienen arriba) con ayuda de un cuchillo, continuamos partiéndolos en 4 partes, para que así le sea más fácil a la licuadora molerlos, al igual que la cebolla, y los agregamos junto con el diente de ajo sin la cascara.

- We proceed to blend the ingredients with a cup and a half of water, at maximum speed until they are perfectly ground. If you wish you can strain the tomato broth before continuing with the recipe, but it is something that I personally do not do since it does not make much difference in the final dish.
>- Procedemos a licuar los ingredientes con una taza y media de agua, a la velocidad máxima hasta tenerlos perfectos molidos. Sí lo deseas puedes colar el ahora caldillo de jitomate antes de continuar con la receta, pero es algo que en lo personal no hago ya que no hay mucha diferencia en el platillo final.  

- We reserve our broth. Now we peel the skin of our carrot and cut it into small cubes, while we cut the spinach leaves into pieces, which we will also reserve for the following.  
>- Reservamos nuestro caldillo. Ahora pelaremos la piel de nuestra zanahoria y la partiremos en cubos pequeños, mientras que a las hojas de espinaca las cortamos en pedazos, los cuales también reservaremos para lo siguiente.

- We move to the saucepan, to which we heat a little to later add a portion of cooking oil, which is also left to heat over low flame.
>- Pasamos a la cacerola, a la que calentemos un poco para posteriormente agregarle una porción de aceite de cocina, el cual también se deja calentar a fuego bajo.

- When it is hot enough, we lower the heat to the minimum to add the whole soup package, taking care to move it consistently with the help of a large spoon to prevent it from burning, as it is very easy for that to happen.
>- Cuando se encuentre lo suficientemente caliente bajamos al mínimo el fuego de la estufa para agregar el paquete de sopa completo, cuidando de moverlo consistentemente con ayuda de una cuchara grande para evitar que se queme, ya que es muy fácil que eso suceda

- Continue moving the soup paste evenly until it starts to approach a golden hue, at which point we will then add the carrot cubes to the casserole, taking care to consistently incorporate them into the browned paste. And we will continue mixing as we have been doing so far. This is to better blend the flavors of the ingredients, and to begin to soften the carrot since, although it is cut into small pieces, it still takes a long time for it to be fully cooked to par with our recipe.
>- Continuamos moviendo la pasta de la sopa uniformemente hasta que empiece a acerque a un tono dorado, en el que entonces añadiremos a la cacerola los cubos de zanahoria, cuidado de incorporarlos consistentemente a la pasta dorada. Y continuaremos revolviendo como lo habíamos estado haciendo hasta ahora. Esto con el propósito de fusionar mejor los sabores de los ingredientes, y de comenzar a ablandar la zanahoria puesto que, aunque esta cortada en pequeñas partes, aún es muy tardado que este cocida por completo a la par de nuestra receta.

- Approximately 5 minutes after sautéing the pasta and carrots over medium heat, we add the tomato broth and stir everything with the spoon quickly to incorporate all the ingredients while raising the flame so as not to lose the temperature of the recipe.
>- Aproximadamente 5 minutos después de estar salteando la pasta y la zanahoria a fuego medio, le agregamos el caldillo de jitomate y revolvemos todo con la cuchara rápidamente para incorporar todos los ingredientes a la par que subimos la flama para que no se pierda la temperatura de la receta.

- Wait for it to boil for the first time and add two cups of water or chicken broth, stir again to prevent the pasta from sticking to the pan and to incorporate the ingredients. 
>- Esperamos que hierva por primera vez e incorporamos dos tazas de agua o caldo de pollo, volvemos a revolver para evitar que la pasta se pegue a la cacerola y para incorporar los ingredientes.

- After another 6 minutes or so of boiling, we taste the broth to know how much salt it needs. Personally, I recommend that you have a teaspoon of powdered chicken broth (in case you have not added liquid chicken broth instead of water) and a teaspoon of grain salt, from there you can make the salt and flavor corrections.  Throughout this process we must be careful to stir constantly with the spoon because it is very easy for the paste to stick to the bottom of the pan and burn.
>- En otros 6 minutos aproximadamente que vuelva a dar un hervor, probamos el caldillo para saber que tanta sal le hace falta. En lo personal, recomiendo que tenga una cucharadita de té de caldo de pollo en polvo (en caso de que no le hayas agregado caldo de pollo liquido en lugar de agua) y una cucharada de sal de grano, a partir de ahí puedes hacer las correcciones de sal y sabor.  En todo este proceso debemos cuidar de revolver constantemente con la cuchara ya que es muy fácil que la pasta se pegue al fondo de la cacerola y se queme.

- As soon as you like the taste of the soup, stir in the chopped spinach leaves as soon as possible. Although it may seem like a lot of volume for the pan, the spinach will more than halve in size as it cooks, so it will be very enjoyable in the end on the plate.
>- En cuanto te guste el sabor el de la sopa, incorpora lo antes posible las hojas de espinaca cortadas y revolver. Aunque pueda parecer un gran volumen para la cacerola, las espinacas reducirán a más de la mitad su tamaño al cocinarse, por lo que al final se disfrutarán mucho en el plato.

- About 10 minutes later over medium heat and stirring constantly, the pasta and vegetables should be cooked by now, if they are not yet, keep an eye on them until they are cooked, or just turn off the heat and close the casserole to let the heat finish cooking the rest.	
- Alrededor de 10 minutos después a fuego medio y revolviendo constantemente, la pasta y las verduras ya deben estar cocidas, sí todavía no es así, permanece al pendiente hasta que se cosa, o sólo apaga el fuego y tapa la olla para que el calor termine de cocer lo restante.

- Finally serve a delicious portion on a deep dish 😋.

In my family we have always added a little lime juice, although I know that other families add avocado, small pieces of chicken breast, pickled chili juice and even Mexican hot sauce 😮. 
Also the most popular is to accompany the soup with delicious warm corn tortillas 😋.
>En mi familia desde siempre le hemos agregado un poco de jugo de limón, aunque sé que en otras familias le agregan aguacate, pequeños pedazos de pechuga de pollo, jugo de chiles en vinagre y hasta salsa picante mexicana 😮. 
También lo más popular es acompañar la sopa con deliciosas tortillas de maíz calientes 😋. 

This recipe may seem a bit complicated, and especially the step of frying the pasta is somewhat delicate, so you have to be particularly careful and do not stop stirring over low heat constantly at all times until it has a golden color. 
Also, this dish is one of the most popular in Mexican families, due to the economics of preparing a whole pot, as well as the versatility of its ingredients, since you can actually add whatever you like or have on hand, and of course, for its tasty flavor 😋.
>Esta receta puede parecer algo complicada, y en especial el paso de freír la pasta es algo delicado, por lo que hay que tener particularmente cuidado y no dejar de revolver a fuego bajo constantemente en todo momento hasta que se tenga un color dorado. 
A su vez, este platillo constituye uno de los más populares de las familias mexicanas, debido a lo que económico que resulta preparar una olla entera, así como a la versatilidad de sus ingredientes ya que en realidad le puedes agregar los que más te gusten o los que tengas a la mano, y por supuesto, por su sabroso sabor 😋.
