<div class="text-justify">I have always been one of those who think that Sundays are for sharing with family, but unfortunately, covid-19 has taken us away from that kind of things, although at home we are always together, we have had to be distant from other relatives who live even a couple of houses away from ours, and with whom we loved to share this kind of meals, meals that remind us of the warmth of home and our beloved grandmother.

Foods that she loved to prepare for us, and that we enjoyed very much, last Sunday would have been her birthday, so I wanted to do something thinking about her and prepare this delicious soup of red beans and chorizo, which in truth all they needed was her presence because they were just as delicious as the ones she made for us, at last, I think I'm learning to cook hahaha.

<li> 250gr of spicy chorizo. </li>
<li> Large carrot cut into cubes. </li>
<li> 250 gr of pumpkin / auyama chopped into cubes. </li>
<li> 2 medium potatoes chopped in cubes. </li>
<li> 1 medium onion finely chopped </li>
<li> 2 finely chopped peppers. </li>
<li> 1/2 finely chopped paprika
<li> 2 tablespoons of chopped celeri. </li>
<li> 1 1/2 Tbsp of common salt </li>
<li> 1 Tsp of cumin. </li>
<li> 1/8 Tsp of spicy paprika. </li>
<li> 1/2 Tsp of turmeric. </li>
<li> 1/8 Tsp of ground black pepper. </li>
<li> 1 Tbsp of sugar </li>
<li> 1 Tbsp of corn oil. </li>
<li> 3 Liters of hot water. </li>

Before the preparation, we cook until they are tender, the red faces, I used pressure stove or express and in 30 minutes they were ready, we reserved. In a hot pot we spread the sugar and add the oil until it caramelizes, we continue adding the chopped onion and sauté until it crystallizes to continue adding the chopped paprika, chili and celeri, we sauté for a couple of minutes and add the chopped chorizo to taste, we sauté for about 5 more minutes.

We continue adding the carrot, potato and diced pumpkin and stir to add the spices and salt, continue stirring for a couple of minutes and add the hot water, let it cook at high heat for about 15 minutes.

After this time, we add the red faces and let it cook for about 10 more minutes. I added some corn dumplings, we let it cook for about 20 more minutes, we turn off the fire and let it rest to serve.

White rice and steamed ripe bananas with cheese are the accompaniments of this delicious red face soup, just as my beloved grandmother Pancha used to serve it. A complete meal that leaves many asking for more, because of its delicious flavor, although a good portion will leave you satisfied for hours. What a great way to remember my old lady on her birthday.

<div class="text-justify">Siempre he sido de los que piensan que los domingos son para compartir en familia, pero lamentablemente el covid-19 nos ha alejado de ese tipo de cosas, aunque en casa siempre estamos todos juntos, hemos tenido que estar distantes de otros familiares que viven incluso a un par de casas de la nuestra, y con los que nos encantaba compartir este tipo de comidas, comidas que nos recuerdan el calor de hogar y a nuestra amada abuela.

Comidas que ella amaba preparar para nosotros, y que nosotros disfrutábamos mucho, el domingo pasado habría sido su cumpleaños, así que quise hacer algo pensando en ella y prepare esta deliciosa sopa de caraotas (porotos) rojos y chorizo, que a decir verdad lo único que necesitaban era de su presencia, porque quedaron igual de deliciosos que los que ella nos hacía, al fin creo que estoy aprendiendo a cocinar jajaja.

<li> 250gr de chorizo picante. </li>
<li> 1 Zanahoria grande picada en cubos. </li>
<li> 250 gr de calabaza / auyama picada en cubitos. </li>
<li> 2 Papas medianas picadas en cubos. </li>
<li> 1 Cebolla mediana finamente picada. </li>
<li> 2 Ajíes finamente picados. </li>
<li> 1/2 Pimentón finamente picado.</li>
<li> 2 Cdas de celeri picado. </li>
<li> 1 1/2 Cda de sal común. </li>
<li> 1 Cdta de comino. </li>
<li> 1/8 Cdta de paprika picante. </li>
<li> 1/2 Cdta de cúrcuma. </li>
<li> 1/8 Cdta de pimienta negra molida. </li>
<li> 1 Cda de azúcar. </li>
<li> 1 Cda de aceite de maíz. </li>
<li> 3 Litros de agua caliente. </li>

Previo a la preparación, cocinamos hasta que estén tiernas, las caraotas rojas, yo utilice olla de presión o exprés y en 30 minutos estuvieron listas, reservamos. En una olla caliente esparcimos el azúcar y agregamos el aceite hasta caramelizar, continuamos agregando la cebolla picadita y salteamos hasta cristalizar para continuar agregando el pimentón, ají y celeri picadito, salteamos un par de minutos y agregamos el chorizo picado al gusto salteamos por unos 5 minutos más.

Continuamos agregando la zanahoria, papa y calabaza picada en cubos y revolvemos para agregar las especias y la sal, continuamos revolviendo un par de minutos y agregamos el agua caliente, dejamos cocinar a fuego alto por unos 15 minutos.

Pasado este tiempo agregamos las caraotas rojas y dejamos cocinar unos 10 minutos más. Yo le agregue unos bollitos de masa de maíz, dejamos cocinar unos 20 minutos más, apagamos el fuego y dejamos reposar para servir.

Arroz blanco y plátanos maduros al vapor con queso, son los acompañantes de esta deliciosa sopa de caraotas rojas, tal como la servía mi amada abuela Pancha. Una comida completa que a muchos deja pidiendo más, por su delicioso sabor, aunque una buena porción te dejará satisfecho por horas. Que buena manera de recordar a mi vieja en lo que fuera su cumpleaños.
