<div class="text-justify">Today I had to get up early, I have been awake since 5: 00 am, because my Mathias had to go to school, his teacher is taking care of him and another classmate, to catch them up with their education, and he has to go 3 days a week, today was one of those days and between running to prepare breakfast, wake him up and chase him around the house to brush his teeth and face, when I realized it was time to take him to school and my breakfast was forgotten. When I returned home after dropping him off at school and doing some shopping my stomach almost spoke to me.

I didn't want to complicate myself and I prepared a breakfast like Mi Mathias, a simple and easy shortbread with cooked leg ham and mozzarella cheese with grated gouda cheese that I always like to have in the refrigerator, because I put it on almost everything I prepare. There are days when I wake up with the spirit to prepare a very elaborate breakfast for me and my parents, but others like today when I do not have enough time for great things a simple breakfast but full of flavor always saves my life, and guess what, this was the breakfast for my parents too hahaha, a good cup of coffee and start the day in good spirits.

In the simple things in life many times we find more joy than in more elaborate things, this sandwich so simple took me to remember those breakfasts that my mother packed me to take to school, I did not want to do it in the toaster, because I wanted it that way, simple and fast. As I mentioned before, making this sandwich could not be simpler, just spread butter on both slices of bread, add enough cheese and ham, take it to the pan (or toaster) and brown on both sides at minimum heat so that the cheese melts, as this is its most delicious touch.

Few things in life are as simple and delicious as this. I could have added vegetables and sauces but that's how I wanted it, with an extra dose of butter, at breakfast I allow myself, and is that a toast without butter is like a garden without flowers hahaha.

I remember when I was in college I came to loathe these sandwiches for as I didn't know how to cook many things, this was the most practical thing to do for dinner, it was either this or eat out, and there wasn't always the money to do the latter. For breakfast they are the fastest option when I needed to leave early and didn't want to wake up hours before leaving hahaha, because if I tell you something and many times I am ashamed to say it, is that one of the things I love the most besides cooking, is sleeping late hahaha.

<div class="text-justify">Hoy me ha tocado madrugar, estoy despierta desde las 5:00 am, pues Mi Mathias tenía que ir a la escuela, su maestra lo está atendiendo a él y otro compañerito de clases, para ponerlos al día con su educación, y tiene que ir 3 días a la semana, hoy fue uno de esos días y entre pararme corriendo a preparar desayuno, despertarlo y perseguirlo por la casa para que lavara sus dientes y cara, cuando me di cuenta ya era la hora de llevarlo a la escuela y mi desayuno quedo en el olvido. Al regresar a casa después de dejarlo en la escuela y hacer unas compras mi estomago por poco me hablaba.

No quise complicarme y me prepare un desayuno como el de Mi Mathias, un simple y sencillo pan de mantequilla con jamón cocido de pierna y queso mozarela con queso gouda rallado que siempre me gusta tener en el refrigerador, pues se lo coloco a casi todo lo que preparo. Hay días en los que me levanto con el ánimo de preparar un desayuno muy elaborado para mí y para mis padres, pero otros como hoy en los que el tiempo no me alcanza para grandes cosas un desayuno sencillo pero cargado de sabor siempre me salva la vida, y adivinen que, este fue el desayuno para mis padres también jajaja, una buena taza de café y a iniciar el día con buen ánimo.

En las cosas simples de la vida muchas veces encontramos más alegría que en cosas más elaboradas, este sándwich tan simple me llevo a recordar esos desayunos que mi madre me empacaba para llevar al colegio, no quise hacerlo en la tostadora de pan, pues lo quería así, sencillo y rápido. Como lo mencione antes, hacer este sándwich no puede ser más sencillo, solo es untar mantequilla en ambas rebanadas de pan, agregar suficiente queso y el jamón, llevar al sartén (o al tostador) y dorar por ambos lados a fuego mínimo para que el queso se derrita, pues este es su toque más delicioso.

Pocas cosas en la vida son tan simples y deliciosas como esto. Pude agregarle vegetales y salsas pero así era como lo quería, con una dosis extra de mantequilla, en el desayuno me lo permito, y es que un pan tostado sin mantequilla es como un jardín sin flores jajaja.

Recuerdo que cuando estaba en la universidad llegue a aborrecer estos sándwiches pues como no sabía cocinar muchas cosas, esto era lo más práctico para la cena, era esto o comer en la calle, y no siempre había el dinero para hacer lo segundo. Para el desayuno son la opción más rápida cuando necesitaba salir temprano y no quería despertar horas antes de salir jajaja, pues si algo les digo y muchas veces me da pena decirlo, es que una de las cosas que más amo además de cocinar, es dormir hasta tarde jajaja.
