A Witch in the Kitchen: Pickled gherkins, another way to make them! [EN] // Una Bruja en la Cocina: Pepinillos encurtidos, otra forma de hacerlos![ES]
<div class="text-justify">This time that I have been separated from the kitchen and rest, I have seen any number of recipes that I want to put into practice and taking advantage that I ran out of pickles I wanted to try this way of preparing them that is very different from how I have been preparing it for years, and that is much easier, to tell the truth. A considerable reduction in the processes and an evident decrease in the preparation time was what most caught my attention.

I was saving these cucumbers to make a Sweet Relish, but it will be for later, I will surely share them with you. Some burgers without pickles are like a garden without flowers, or a sky without a star, the truth is that I can't imagine them without them, so at the request of my parents and siblings I activated myself in the kitchen to prepare these delicious pickles.

Any pickle recipe, in my opinion, is easy, but this one really seemed easier than usual and that's why I wanted to share it with you, and in the end you will decide which recipe is easier to make. For now, come with me and I will show you how to prepare them.

<li> 1/4 Tbsp of hot paprika. </li>
<li> 1/2 Tbsp mustard seeds. </li>

<li> 1 Cup of alcohol vinegar. </li>
<li> 1/8 Tsp of turmeric powder. </li>
<li> 2 Tbsp of sugar. </li>
<li> 3 dry red chilies. </li>

To begin with, cut the cucumbers in slices of a couple of millimeters thick and place them in a bowl, sprinkle a spoonful of salt over them and stir, cover and set aside for about 20 minutes. This will make the cucumber soft and release some of its juices.

While waiting for the salt to do its thing in the cucumber, we bring the water to a boil, and already boiling, we add the spices (salt, sugar, mustard, turmeric, hot paprika), vinegar and chopped dried chilies and stir. Drain the cucumbers and place them in a previously sterilized glass jar. Add the water, still boiling, until the cucumber is covered and ready.

Since these pickles won't last long, I don't pasteurize them, and after they get cold I take them to the refrigerator, you can pasteurize them and store them for up to a couple of months in a cool, dry place. As you can see it is a very simple recipe and the result is just as delicious, ideal for my so desired hamburgers. What do you like with the pickles?

<div class="text-justify">Este rato que he estado separada de la cocina y guardando reposo, he visto cualquier cantidad de recetas que quiero poner en práctica, y aprovechando que se me acabaron los pepinillos quise probar esta manera de prepararlos que es muy diferente a como la he venido preparando por años, y que es mucho más fácil, a decir verdad. Una reducción considerable en los procesos y una evidente diminución en el tiempo de preparación fue lo que más llamó mi atención.

Cualquier receta de encurtidos, a mi parecer, es fácil, pero está realmente me pareció más fácil de lo habitual y por eso quería compartirla con ustedes, y al finar ustedes decidirán que receta es más sencilla de realizar. De momento, acompáñenme y les muestro como los prepare.

Para comenzar cortamos los pepinos en rodajas de un par de milímetros de espesor y las disponemos en un tazón, esparcimos sobre ellos una cucharada de sal y revolvemos, tapamos y reservamos por unos 20 minutos. Esto hará que el pepino se torne suave y largue parte de sus jugos.

Mientras esperamos que la sal haga lo suyo en el pepino, llevamos el agua a hervir, y ya hirviendo agregamos las especias (sal, azúcar, mostaza, cúrcuma, paprika picante), el vinagre y los chiles secos picados y revolvemos. Escurrimos los pepinos y disponemos en un frasco de vidrio previamente esterilizado, agregamos el agua aun hirviendo hasta cubrir el pepino tapamos y listo.

Como estos pepinillos no van a durar mucho tiempo, no los pasteurizo, y luego de que se enfrían los llevo al refrigerador, puedes pasteurizarlos y guardarlos hasta un par de meses en un lugar fresco y seco. Como lo ven es una receta sumamente sencilla y el resultado es igual de delicioso, ideal para mis tan deseadas hamburguesas. Y a ti ¿Con que te gustan los pepinillos?
