Una Bruja en la Cocina: "Pasta Flan - Trying Recipes From Instagram" [EN]//[ES]

Ho come with the intention to sweeten your day to start the week with joy, one of the things for which I use the networks 2. 0, is to look for ideas for my recipes, sometimes I get good options and so I resort to them, a couple of weeks ago I came across a recipe that caught my attention mainly because of one of its ingredients, and it is something that I had not noticed before; a flan or quesillo of pasta, looking at the list of ingredients I realized that it has the same ingredients that a flan or quesillo would have, only in smaller quantity and adding a quantity of pasta, from the beginning I said to myself, it will work because the pasta would serve as wheat flour, so it would act as an emulsifier for the mixture, but what about the taste? I don't think there would be much difference since the paste per se, is neutral in taste, yesterday was the day to prepare this dessert and here I come to show it to you.

My biggest critics, my parents, were the quality control of this preparation, which as you can see is very similar to a traditional Venezuelan egg flan or quesillo, however, the first thing I will say is that its texture is more similar to one of those flans sold in a box, so, with this in mind, I will also say that its flavor is delicious, taking into account that I made a few adjustments that the original preparation does not have. I mainly adjusted the quantities, because I wanted to make more, and knowing what I told you before, that the recipe itself can work, I took the risk of making it this way, I added orange peel, which gives a delicious flavor and aroma to this preparation and I omitted the rum, because I didn't have it at home.

The wonderful thing about this flan is that to prepare it we only need to add the ingredients in a blender and process for about 3 to 4 minutes, oh and let's not forget the caramel that is also a fairly simple process, but requires its trick. And this type of dessert, although it is very easy to prepare, is one of those that I prepare less at home, because it is a great temptation to have it in the refrigerator and not want to eat it all hahaha. To begin this preparation we will make the caramel, since it has to be at room temperature by the time we add the flan mixture; to do this, we add in the mold (and here my first variation of the recipe, first by the size of the mold) 150 grams of sugar and 100 ml of water, and bring to high heat, letting it cook without moving until the caramel begins to take the beautiful amber color we are looking for, at that point we turn off the heat and stir, as it has already begun to burn the caramel so to speak, the heat is maintained throughout the surface, and thus ends to grab that beautiful color, the rest of it, let it cool.

We continue with the preparation of the flan mixture, for this, in a blender, add the pasta, I used spaghetti as in the recipe video, but surely any type of pasta will do, the texture of the pasta, leave it as we normally consume at home, this is a point that is not explained in the video, then add the eggs and vanilla, the order in which the ingredients are added is another in the video reference, but believe me when I say that it is not something that influences the final result.

We continue with the condensed milk and the whole milk, again I digress here to say that I boiled the water with which I prepared the milk with orange rind, so that it would absorb the flavor of the milk and its oils, thus giving it its delicious flavor and aroma to the flan, also add at the time of blending the milk, the extra 100 gr of sugar that I added for the variation in the ingredients. Process everything very well, and pour the mixture into the mold in which we have previously added the caramel.

Here is another variation, but this time in cooking, I take it to a bain-marie, this guarantees faster cooking, in the oven it could take up to twice the cooking time, after 60 minutes we insert a toothpick, if it comes out clean it is because our flan is ready. We let it cool and take it to the fridge for at least 6 hours before serving, or if you're impatient like me, a couple of hours in the freezer hahaha. Now, let's talk about the result, the likes and dislikes of this recipe, the texture of this flan as I mentioned, is never the same as the traditional egg flan or quesillo, you can feel the presence of a thickener in the mixture, the preparation and cooking process, On the other hand, the flavor is identical to quesillo, the variation is in the texture without a doubt, and it is likely that I have been given this flan of paste, passing it off as quesillo and by not paying attention to the texture, I will have tasted it the same. Now, if you ask me, I would prefer to make a traditional quesillo or egg flan, because the texture is something else, although this one is quite creamy, it does not match it, and if we look at the procedure and the ingredients, what we save is a couple of eggs, which we replace with pasta, otherwise everything is the same, yes, it is delicious, and if you want to try it, I encourage you to do it, surely you will not regret it.

Ho vengo con la intención de endulzarles el día para que comiencen la semana con alegría, una de las cosas para las que utilizo las redes 2.0, es para buscar ideas para mis recetas, en ocasiones me consigo con buenas opciones y por ello recurro a ellas, hace un par de semanas me topé con una receta que me llamó la atención principalmente por uno de sus ingredientes, y es que, es algo que no había observado antes; un flan o quesillo de pasta, observando la lista de ingredientes me di cuenta de que tiene los mismos ingredientes que un flan o quesillo tendría, solo en menor cantidad y adicionándole una cantidad de pasta, de entrada me dije, va a funcionar pues la pasta haría las veces de la harina de trigo, por lo que haría de emulsionante para la mezcla, ahora bien, ¿y el sabor? No creo que habría mucha diferencia puesto que la pasta per sé, es de sabor neutro, ayer fue el día de preparar este postre y aquí vengo a mostrárselo.

Mis mayores críticos, mis padres fueron el control de calidad de esta preparación, que cómo pueden apreciar se asemeja mucho a un flan de huevo o quesillo tradicional venezolano, sin embargo, lo primero que yo diré, es que su textura de asemeja más, a un flan de esos que venden en cajita, así que, con esto presente, también les digo, que su sabor es delicioso, teniendo en cuenta que le hice unos cuantos ajustes que en la preparación original no hay. Ajuste principalmente cantidades, pues quería hacer más cantidad, y sabiendo lo que ya les comenté antes, que la receta en si puede funcionar, me arriesgue a hacerla así, le adicione cáscara de naranja, que le otorga un delicioso sabor y aroma a esta preparación y obvie el ron, porque no tenía en casa.

Lo maravilloso de este flan es que para prepararlo solo necesitamos agregar los ingredientes en una licuadora y procesar por unos 3 a 4 minutos, ah y no olvidemos el caramelo que es un proceso también bastante sencillo, pero requiere su truco. Y este tipo de postres, aunque es muy fácil de preparar, es de los que menos preparo en casa, pues es una tentación muy grande tenerlo en el refrigerador y no querer comértelo todo jajaja. Para comenzar esta preparación haremos el caramelo, ya que este tiene que estar a temperatura ambiente para cuando agreguemos la mezcla del flan; para ello, agregamos en el molde (y aquí mi primera variación de la receta, en primera por el tamaño del molde) 150 gr de azúcar y los 100 ml de agua, y llevamos a fuego alto, dejando cocinar sin mover hasta que el caramelo comience a tomar el hermoso color ámbar que buscamos, en ese punto apagamos el fuego y revolvemos, como ya ha empezado a quemarse el caramelo por decirlo así, el calor se mantiene por toda la superficie, y con ello termina de agarrar ese hermoso color, el resto del mismo, dejamos enfriar.

Continuamos con la preparación de la mezcla del flan, para ello, en una licuadora, agregamos la pasta, yo utilice espagueti como en el video de la receta, pero seguramente cualquier tipo de pasta les servirá, la textura de la pasta, la deje como la que normalmente consumimos en casa, este es un punto que no explican en el video, luego adicionamos los huevos y la vainilla, el orden en que se agregan los ingredientes es otro en el video referencia, pero créanme cuando les digo que no es algo que influya en el resultado final.

Continuamos con la leche condensada y la leche completa, nuevamente hago paréntesis aquí para decir que, herví el agua con la que prepare la leche con corteza de naranja, de manera que esta absorbiera el sabor de la misma y sus aceites, otorgándole así su delicioso sabor y aroma al flan, además agregue al momento de licuar la leche, los 100 gr extras de azúcar que adicione por la variación en los ingredientes. Procesamos todo muy bien, y vertemos la mezcla en el molde en el que previamente hemos agregado el caramelo.

Aquí otra variación, pero esta vez en la cocción, lo lleve a baño de maría, esto me garantiza una cocción más rápida, en horno podría llevar hasta el doble del tiempo de cocción, pasad0s 60 minutos introducimos un palillo, si este sale limpio es porque nuestro flan está listo. Dejamos enfriar y llevamos al refrigerador por al menos 6 horas antes de servir, o si eres impaciente como yo, un par de horas en el congelador jajaja. Ahora bien, hablemos del resultado, los me gusta y los no tanto de esta receta, la textura de este flan como ya lo mencione, no es jamás, igual que la del flan de huevo o quesillo tradicional, se siente la presencia de un espesante en la mezcla, el proceso de preparación y cocción, es igual al del flan, por otro lado, el sabor, idéntico al quesillo, la variación está en la textura sin duda alguna, y es probable que me hayan dado este flan de pasta, haciéndolo pasar por quesillo y por no poner atención en la textura, lo habré degustado igual. Ahora bien, si me lo preguntan, preferiría hacer un quesillo tradicional o flan de huevo, pues la textura es otra cosa, aunque este es bastante cremoso, no lo iguala, y si nos fijamos en el procedimiento y los ingredientes, lo que nos ahorramos es un par de huevos, que sustituimos con pasta, de resto todo es igual, si, es delicioso, y si deseas probar, te animo a hacerlo, seguramente no te arrepentirás.

Pensando en la chicha de pasta fue que dije que si podría funcionar, básicamente la pasta hace las veces de espesante, por eso se le agregan menos huevos. Tampoco lo habría pensado, ni lo había visto nunca antes.
