A satisfying Kway Chap at Yi Fa

It's not so often that I eat Kway Chap but it's not to say that it's not one of my favorite local dishes here in Singapore. I could say that it's a dish that is in my Top 10 fave local dishes of all time!

It may seem intimidating at first but as soon as you take the first bite then you will realize how good it is. There's nothing extraordinary about this dish other than one of the ingredients which is the intestines. Aside from that then the rest of the ingredients is as usual as the other dishes.

Pork Belly! For me, this is the star of the dish. It was perfectly cooked. The meat is tender while the fat has a nice jelly-like texture. The skin was nicely cooked too, it's tender and gelatinous.

Deep-fried tofu! This is another interesting ingredient because it was boiled together with the soup. It absorbed the flavor of the soup and it tasted great!

The sliced hard-boiled egg is also a good addition to this dish. It adds an extra layer of flavor and texture. It's nice together with the soup as well.

And then here's the intestines. Surprisingly, there's "zero" gamy taste or flavor. By comparison, this one surprisingly tastes clean to all of the intestine recipes I tasted before. Once again, I'm amazed by the skill of the chef, the texture is so good that it feels good to chew.

Together with this dish is a bowl of rice and soup as well. It was a satisfying meal and I'm glad that I discovered this new stall that specializes in making Kway Chap. It's located in the Old Airport Road Food Center and the name of the stall is Yi Fa Kway Chap!
