One of the cheeses I love the most from my homeland is Guayanés Cheese. It is elaborated with fresh milk that is put to boil and given a round shape with your hands. It is a very soft, slightly salty, watery and fresh kind of cheese. I prepared a quick sandwich with this cheese plus some fresh ingredients for dinner.

Once I toasted the outer bread surface, and chopped all the ingredients (preferably slices) I was good to go. The assembly of this sandwich is all about layers. First, I placed coriander and garlic. Next, I added tomatoes and cucumber slices. On top of them, I placed the guayanes cheese and stripes of bell pepper. Finally I added the remaining coriander and garlic. On the other part of the sandwich I added mayonnaise and mustard.

Primero, coloqué cilantro y ajo. A continuación, agregué tomates y rodajas de pepino. Encima de ellos coloqué el queso guayanes y las tiras de pimiento morrón. Finalmente agregué el cilantro y el ajo restantes. En la otra parte del sándwich agregué mayonesa y mostaza.

The outer toasted texture of the peasant bread makes a great contrast with the inner watery fresh ingredients. If you ever have the chance to taste this cheese, you won't regret it.
