Asian food has a particular taste in my region. Chinese immigrants adapted some of their recipes to local ingredients and locals' taste for food. We are accustomed to a certain type of Chinese food since then, and we love it! I enjoy cooking this for my family, and being done by us is also healthier.

Chinese rice is completely fried, prepared fast, and with high levels of MSG (Ajinomoto). That does not make it very "heart and circulation" friendly, but it certainly makes it tasteful. In my homemade version, I prepare this rice frying only certain ingredients, getting everything ready separately, and reducing significantly the amounts of MSG. I used ham, carrots, chives, and an egg tortilla as Cantonese tend to prepare it. For seasoning, I used sesame oil, dark soy sauce with mushrooms, salt, sugar, and ajinomoto.

>El arroz chino es completamente frito, preparado rápido y con altos niveles de glutamato monosódico (Ajinomoto). Eso no lo hace muy amigable para el "corazón y la circulación", pero ciertamente lo hace de buen gusto. En mi versión casera, preparo este arroz friendo solo ciertos ingredientes, preparando todo por separado y reduciendo significativamente las cantidades de glutamato. Usé jamon, zanahorias, cebolletas y una tortilla de huevo como la preparan los cantoneses. Para condimentar utilicé aceite de ajonjoli, salsa de soja oscura con champiñones, sal, azúcar y ajinomoto.

After precooking the rice, and having all ingredients ready (including the tortilla), I placed two tablespoons of sesame oil into the pan. Then, I added the  Ham chopped in cubes. After a couple minutes, I added some chopped chives. It is important not to overcook the chives or they will taste burnt pretty easily. I just added right before incorporating the rice.

A minute after adding the chives, I incorporated the rice and started mixing everything together. Then, it was time for some soy sauce. I love this sauce with mushrooms; I barely use the clear one. This is also something measured according to taste.

Once the soy sauce has tainted the rice uniformly, I add the rest of seasoning ingredients. These tablespoons look alike, but one is MSG (look for the tube crystals) and one is sugar. I only added one tbsp. of sugar and two of MSG. Normally, Chinese people will add one tbsp. of MSG per plate, and that is just too much in my opinion hehe.

Lastly, I added the rest of ingredients, grated carrots, more chopped chives, and the tortilla in pieces. I mixed everything together, and allowed the rice to be cooked with low flame for five more minutes.

This is the final result. The umami flavor is present thanks to the ajinomoto. Encountering ham and eggs is of great texture. This preparation is a slightly sweet dish. I just love it.

No soy amante del arroz pero se ve muy bueno, sobretodo su preparación. Aquí preparan uno así tipo arroz chino y le llaman chaulafan.
