In truth I can make quite a lot of stuff, and most enjoy cooking now and then, but I'd not call myself a good cook, just average. Tonight I decided to use my average cooking skills to make dinner and I was pretty chuffed because it came out well, by my standards. I had a hankering for baked potatoes because, *potatoes y'all*. I decided to add in some carrots, broccoli and parmesan-crumbed chicken schnitzel and mushroom sauce made with fresh mushrooms - but the hero of the meal was the potatoes! You can see the end result pictured above. Yeah folks, I know it's not the best plate of food you've ever seen, but it tasted pretty good and that's what counts right? I did a thing with the potatoes, sliced them about one-third the way through along their length and rubbed powdered French onion soup mix into them prior to spraying with virgin olive oil and baking along with the carrots. I'd usually poke some rosemary sprigs into the cuts but I didn't have any so, fuck it. Once plated I drizzled on my mushroom sauce, sprinkled a little parmesan cheese on the top and that was that. Dinner is served. Above you can see some of the process. I'll be honest and say I made far too many potatoes...*and will be honest and say I made far too many potatoes on purpose*...and ate them because wasting food doesn't sit well with me. The initial dinner-idea revolved around baked potatoes and all the other stuff was just the accompaniments, so I feel quite vindicated for my *potatoexcessivity* and besides, they were fucken legit, so what the hell right? I had company for dinner and heard not a whisper of complaint, but many compliments which I took in my stride, modestly. Secretly though, I was really pleased with how things turned out and loved the compliments. I think I'm on a roll because tomorrow morning I've planned a nice brunch, *brunch because a pretty big sleep-in is planned* and I think the momentum from an average, but successful, dinner tonight will continue. I have planned toasted olive rye bread spread with butter, slathered with humus, and topped with sliced of avocado with cheesy scrambled eggs; it might sound average, but it's *legit.* If you don't believe me, I don't really care. Anyway, don't worry, you'll not see too many cooking posts from me, just one now and then I guess, when things turn out ok...which isn't every time. *** Do you have a go-to meal you're good at cooking? I'll accept a response even if you're average at cooking it also. It's all about the enjoyment of good food rather than presenting it as they do in that show, Masterchef, for me at least. Your meal certainly does look legit AF. I would eat that and go back for seconds! You don't strike me as an average cook at all. I'm generally terrible at cooking but I have a few dishes that are staple favourites. Lasagne, Spaghetti bolognaise, Pizza, Potato Bake, Lamb Chops and stir fry veg, Beef Stew, Cabbage Stew and toasted sandwiches (a *lot* of toasted sandwiches) are all on the menu of regulars that I enjoy to make and eat. Your brunch sounds just as appetizing, I hope you enjoy it π

I make a pretty good toasted sandwich myself to be honest, a legit breakfast, lunch or dinner, or really anytime I guess. Other than lamb chops everything else on your go-to list is legit. (Never been a huge fan of lamb.) Brunch should be good, but only after a suitably decent sleep in.

I like the look of the hasselback potatoes. I'm showing off, because I never heard of the name "hasselback" till a couple of years ago....LOL.... but that's how they look. You can have my serving of mushrooms though. Half cooked broccoli.... so far, I haven't been fond of veggies cooked like they can't make up their mind which way they want to be. I like the raw or all the way soft, but not where they "feel" to my teeth like they are only halfway done. Some people are just persnickety.... right ? Looks good though and your breakfast sounds pretty tasty too.

I'm not sure what the potatoes are called, but hassleback works for me. I call them pink ones though, because they're pink. Either way they were tasty. The whole thing worked out ok, including the broccoli - cooked to perfection. Broccoli with no *bite* and the colour cooked out of it doesn't do much for me. Isn't it great we all have different tastes, likes and dislikes? It'd be boring otherwise.

Hey @galenkp, I had to stop by when I saw those potatoes, we call it fantail potatoes; way more delicious than ordinary roast potatoes or potato bake, so they often feature on my menu! All my favourites are on one plate here, yummm! I'd say my Lemon & fresh herb Roast Chicken is everyone's favourite, crispy almost burnt skin & succulent inside, served with gravy made with pan juices, and...fantail potatoes... plus roast veggies, and to end it all off, a homemade Apple Crisp :) I'm sure your guests must have enjoyed your meal

I was in the restaurant biz for 30 years, starting out in the kitchen and ending up as chief bottle scrubber, otherwise known as the boss. The last thing I want to do these days is cook. I remember @tarazkp and I made a bit of a dud once though...We named it *mush*. That pretty much says it all. I made yoghurt a couple times and it came out ok. I generally buy it now though. No garlic bread this time. An odd combination of risotto, a salad, and chicken tikka masala. My stepdaughter wasnβt home tonight so the rest of us had an Indian dish and a mushroom-based dish, both things she as a very picky eater doesnβt like.

The food looks yummy! I am a fan of potatoes too, be it baked, mashed, or fries. I rarely cook so I don't really have a go-to meal, there's just so many food options available in the neighbourhood.

Meal looks amazing don't know whatchu talken bout. And that is the correct amount of potato (proportion wise I probably would have had less because I think I'm smaller than you but even then no guarantee as I love potatoes). There's always room for more potatoes on the plate right? If not, eat some and make room! I have done some creative things with 2-minute noodles over the years, made them palatable by adding other things, fresh vegetables and all. OK, so they weren't great, but they were better than what they could have been.

> I have breakfast stuff for dinner regularly, it's splendid, Yup, that's me, too. In a time crunch? Breakfast. Lazy and out of ideas? Breakfast. Seriously, who can argue with eggs, meat, toast/pancakes/waffles, fruit, etc. I even know a person who has her own chicken farm and she delivers fresh eggs every Saturday. Yum. I can do a kick ass lasagna, too, but being that I'm a lazy cook, and it's time consuming, I don't do it very often. But man.. that meal you've done looks awesome.
