<div class="text-justify">Greetings dear friends and vegan food lovers. As a grain lover I was thinking of making a minestrone soup, I had tried this dish a long time ago and I loved it. Actually, I had no idea how to prepare this soup, so I was rummaging on the internet to know the ingredients. However, I came across many versions, some included only one type of bean, others combined two. Green beans were a must, as well as carrots, however, as I was a little short of money I decided to prepare my recipe with the ingredients I had at home, the result was fabulous.</div>

<div class="text-justify">While some recipes used white or red beans, or both, I combined yellow split peas with red beans. I added potatoes, carrots, yucca, ocumo blanco, celery criollo or arracachas and elbow noodles, or any other noodle of your choice. The rest of the ingredients I tell you in the recipe, without further ado, my delicious minestrone Hylene74 style.</div>

## Ingredients

<div class="text-justify">- 1/2 cup split yellow split peas soaked overnight prior to preparation</div>
<div class="text-justify">- 1/2 cup red beans soaked overnight prior to preparation</div>
<div class="text-justify">-1 red pepper</div>
<div class="text-justify">- 1/2 large tomato</div>
<div class="text-justify">- 4 cloves of garlic</div>
<div class="text-justify">- 1 medium onion</div>
<div class="text-justify">- 1 medium potato</div>
<div class="text-justify">- 1 medium carrot</div>
<div class="text-justify">-200 grams of tubers (white octopus, creole celery and yucca)</div>
<div class="text-justify">- Salt to taste</div>
<div class="text-justify">- 1 teaspoon cumin</div>
<div class="text-justify">- 2 teaspoons turmeric</div>
<div class="text-justify">- 1 teaspoon paprika</div>
<div class="text-justify">- 2 teaspoons dried oregano</div>

## Preparación 

<hr>

<div class="text-justify">4.- Wash and cut into cubes the onion, tomato and red pepper. We also remove the skin from the garlic and cut them very small.<div>

<div class="text-justify">Saludos queridos amigos y amantes de la comida vegana. Cómo amante de los granos que soy estuve pensando en hacer una sopa de minestrone, hace mucho tiempo que había probado este platillo y me encantó. Realmente, no tenía idea de cómo preparar esta sopa, así que estuve urgando en el internet para conocer los ingredientes. Sin embargo, me encontré con muchas versiones, algunas incluían un solo tipo de grano, otras combinaban dos. Las judías verdes no podían faltar, al igual que la zanahoria, no obstante, como estaba algo corta de dinero decidí preparar mi receta con los ingredientes que tenía en casa, el resultado fue fabuloso.</div>

<div class="text-justify">Si bien algunas recetas usaban caraotas blancas o rojas, o ambas, combiné arvejas amarillas partidas con caraotas rojas. Le añadí papas, zanahorias, yuca, ocumo blanco, apio criollo o arracachas y fideos de coditos, puede otro fideo de su preferencia. El resto de los ingredientes se los cuento en la receta, sin más preámbulos, mi delicioso minestrone al estilo Hylene74.</div>

## Ingredientes 

<hr>

<div class="text-justify">- 1/2 taza de arvejas amarillas partidas remojadas desde la noche anterior a la preparación</div>
<div class="text-justify">- 1/2 taza de caraotas rojas remojadas desde la noche anterior a la preparación</div>
<div class="text-justify">-1 pimentón rojo</div>
<div class="text-justify">- 1/2 tomate grande</div>
<div class="text-justify">- 4 dientes de ajo</div>
<div class="text-justify">- 1 cebolla mediana</div>
<div class="text-justify">- 1 papa mediana</div>
<div class="text-justify">- 1 zanahoria mediana</div>
<div class="text-justify">-200 grs de tubérculos (ocumo blanco, apio criollo y yuca)</div>
<div class="text-justify">- Sal al gusto</div>
<div class="text-justify">- 1 cucharadita de comino</div>
<div class="text-justify">- 2 cucharaditas de cúrcuma</div>
<div class="text-justify">- 1 cucharadita de paprika</div>

## Preparación 

<hr>

<div class="text-justify">1.-. Ponemos a ablandar los granos en ollas separadas, se recomenda hacerlo de esta forma para evitar que no se cocinen de manera uniforme.</div>

<div class="text-justify">2.- Le retiramos la piel a la papa, zanahoria y al resto de los tubérculos. Los lavamos bien, los cortamos en trozos pequeños y los ponemos a cocinar con los granos que ya se han ablandado.</div>

<div class="text-justify">4.- Lavamos y cortamos en cubos la cebolla, el tomate y el pimentón rojo. También le retiramos la piel a los ajos y los cortamos muy pequeñitos.<div>

<div class="text-justify">5.- Luego, los ponemos a freír con un chorrito de aceite hasta que se marchiten. Condimentamos con una cucharadita de sal y una de cúrcuma. Una vez listos, los añadimos a la sopa.<div>

<div class="text-justify">6.- Continuamos agregando el resto de los ingredientes, el orégano seco, la paprika, el comino, cúrcuma y la sal al gusto. Siempre hay que rectificar el punto de sal. Dejamos cocinar la sopa hasta que esté lista.<div>

Que delicia bella, se ve tan espesito tal como me gusta, justamente hoy quería comerme algo así y aunque me gustan mucho los granos la verdad los preparo poco porque....
