<div class="text-justify">Greetings dear friends of Foodies Bee Hive. It's been a while since I've been here, today I'm back to tell you that I was craving for pasta, but not with any animal protein, I wanted something from the sea, so I decided to prepare a pasta with shrimp in a sauce that was finger-licking good. It is the first time I make this recipe using cream, I was a little nervous, but everything turned out well, even better than I expected.</div>

<div class="text-justify">This recipe takes time because we must clean the shrimp, remove the shells, tails, heads and veins, the latter are nothing more than their digestive tract. It is a job that I don't like to do very much, but it is necessary, besides, in the skin and the heads of the shrimp is the secret of a stock that will give any recipe a very special touch. Before, I used to throw away the shells and heads of this seafood, then, I used them to make a broth or consommé, now, I had a better idea, after making the broth, instead of throwing them away, I decided to blend everything, I obtained a very concentrated stock from the shrimp that was delicious and I have used it for my sauce. Every day we learn something new and we are improving in the gastronomic arts. Without further ado, I present my recipe, I hope you like it..</div>

<div class="text-justify">-  ¾ cup fish stock</div>
<div class="text-justify">- 200 grams of pasta or spaghetti </div>
<div class="text-justify">- 1 small carrot</div>
<div class="text-justify">-  1 sprig of garlic</div>
<div class="text-justify">-  3 cloves garlic</div>
<div class="text-justify">-  1 medium onion</div>
<div class="text-justify">-  ½ red bell pepper</div>
<div class="text-justify">-  1 sweet bell pepper</div>
<div class="text-justify">-  50 grams of parsley</div>
<div class="text-justify">- 1 teaspoon dried oregano</div>
<div class="text-justify">- 3 tablespoons of milk cream</div>
<div class="text-justify">- Salt to taste</div>
<div class="text-justify">-  1 teaspoon paprika</div>
<div class="text-justify">- 1 teaspoon cumin</div>
<div class="text-justify">- 1 pinch of ground pepper</div>
<div class="text-justify">- Extra virgin olive oil</div>

## Preparation

<hr>

<div class="text-justify">1.-. Wash the shrimp, remove the shell, tail and head, and set aside. Then, with the help of a knife, section the back part and remove the dark vein. The same procedure is done on the lower part. Then we proceed to wash them to make them very clean.</div>

<div class="text-justify">2.-. Season the shrimp with salt to taste and a pinch of pepper.</div>

<div class="text-justify">3.-. In a frying pan add a dash of olive oil and sauté the shrimp for two minutes, they will take a pink smell, it will be time to remove them from the heat. It is not recommended to cook them too much because they will take a chewy consistency.</div>

<div class="text-justify">4.- We prepare the pasta al dente. Boil water with a teaspoon of salt, add the pasta and cook until al dente. Strain and add a drizzle of extra virgin olive oil to prevent it from sticking.</div>

<div class="text-justify">5.- Peel the garlic, cut it very small and repeat the same procedure with the onion. We also wash the chili, red bell pepper, parsley and carrot and cut them into small pieces.<div>

<div class="text-justify">7.- Once the garlic and onion have wilted a little, add the chili, red pepper and carrot in small pieces. Let cook for a couple of minutes and season with salt to taste. Then, add the fish stock together with the shrimp shells, tails and heads. A couple of minutes later, add the dried oregano and mix. Add salt to taste.<div>

<div class="text-justify">8.- Once the broth is ready, let it stand for about 5 minutes and then pour everything into the blender. Blend for 30 seconds and proceed to strain.<div>

<div class="text-justify">Saludos estimados amigos de Foodies Bee Hive. Tiempo que no pasaba por aquí, hoy estoy de vuelta para contarles que estaba antojada de comer pasta, pero no con cualquier proteína animal, quería algo de mar, así que me decidí a preparar una pasta con camarones en una salsa que me quedó como para chuparse los dedos. Es la primera vez que hago esta receta en la que utilicé crema de leche, estaba algo nerviosa, pero todo salió bien, incluso, mejor de lo que esperaba.</div>

<div class="text-justify">Esta receta lleva su tiempo porque debemos limpiar los camarones, retirarle las cáscaras o conchas, las colas, las cabezas y las venas, éstas últimas no son más que su tracto digestivo. Es un trabajo que no me gusta mucho hacer, pero es necesario, además, en la piel y las cabezas de los camarones está el secreto de un fondo o caldo que le dará a cualquier receta un toque muy especial. Antes, yo botaba las cáscaras y cabezas de este marisco, luego, las aprovechaba haciendo un caldo o consomé, ahora, tuve una mejor idea, después de hacer el caldo, en lugar de desecharlas, decidí licuar todo, obtuve un fondo muy concentrado de las gambas que quedó delicioso y lo he usado para mi salsa. Cada día se aprende algo nuevo y vamos mejorando en las artes gastronómicas. Sin más preámbulos, les presento mi receta, espero que les guste.</div>

## Ingredientes

<div class="text-justify">-  ¾ taza de caldo de pescado</div>
<div class="text-justify">- 200 grs de pasta o espaguetti</div>
<div class="text-justify">- 1 zanahoria pequeña</div>
<div class="text-justify">-  1 ramita de ajo porro</div>
<div class="text-justify">-  3 dientes de ajo</div>
<div class="text-justify">-  1 cebolla mediana</div>
<div class="text-justify">-  ½ pimentón rojo</div>
<div class="text-justify">-  1 ají dulce</div>
<div class="text-justify">-  50 grs de perejil</div>
<div class="text-justify">- 1 cucharadita de orégano seco</div>
<div class="text-justify">- 3 cucharadas de crema de leche</div>
<div class="text-justify">- Sal al gusto</div>
<div class="text-justify">-  1 cucharadita de paprika</div>
<div class="text-justify">- 1 cucharadita de comino</div>
<div class="text-justify">- 1 pizca de pimienta molida</div>
<div class="text-justify">- Aceite de oliva extra virgen</div>

## Preparación

<hr>

<div class="text-justify">1.-. Lavamos los camarones, le retiramos el cascarón, la cola y la cabeza, esto lo reservamos. Luego, con la ayuda de un cuchillo, seccionamos la parte de la espalda y retiramos la vena oscura. El mismo procedimiento lo hacemos en la parte inferior. Enseguida procedemos a lavarlos para dejarlos bien limpios.</div>

<div class="text-justify">2.-. Salpimentamos los camarones con la sal al gusto y una pizca de pimienta.</div>

<div class="text-justify">3.-. En una sartén agregamos un chorrito de aceite de oliva y salteamos los camarones por dos minutos, tomarán un olor rosado, será el momento de retirarlos del fuego. No se recomienda cocinarlos mucho porque tomarán una consistencia chiclosa.</div>

<div class="text-justify">4.- Preparamos la pasta al dente. Ponemos a hervir agua con una cucharadita de sal, añadimos la pasta y dejamos cocinar hasta que quede al dente. Colamos y le agregamos un chorrito de aceite de oliva extra virgen para que no se pegue.</div>

### Preparamos el caldo concentrado de camarones que será la base de la salsa

<div class="text-justify">5.- Pelamos los ajos, los cortamos bien pequeñitos y repetimos el mismo procedimiento con la cebolla. También lavamos el ají, el pimentón rojo, el perejil y la zanahoria y los cortamos en trocitos.<div>

<div class="text-justify">6.- En la misma sartén donde salteamos las gambas, añadimos un chorrito de aceite de oliva y salteamos la cebolla y el ajo.<div>

<div class="text-justify">7.- Una vez que el ajo y la cebolla se hayan marchitado un poco, incorporamos el ají, el pimentón rojo y la zanahoria en trocitos. Dejamos cocinar un par de minutos y condimentamos con la sal al gusto. Luego, añadimos el caldo de pescado junto con las cáscaras, colas y cabezas de los camarones. Un par de minutos después, agregamos el orégano seco y mezclamos. Rectificamos el punto de sal.<div>

<div class="text-justify">8.- Una vez que el caldo esté listo, dejamos reposar unos 5 minutos para luego verter todo en la licuadora. Licuamos por 30 segundos y procedemos a colar.<div>

<div class="text-justify">9.- Agregamos la crema de leche, la cucharadita de paprika, el comino y el perejil. Rectificamos nuevamente el punto de sal.<div>

<div class="text-justify">10.- Cuando la salsa haya espesado, añadimos los camarones, cocinamos por 1 minuto y luego agregamos la pasta, mezclamos y apagamos el fuego. Solo nos queda servir y disfrutar esta maravillosa preparación.<div>
