I once blogged about following a local chef to the market to buy ingredients for cooking. Now I'll show you the food preparation part after that. <br /> So the chef led us to a traditional walled compound where family members share a courtyard and a kitchen. In the spacious kitchen facing the courtyard, we started to prepare for cooking. He first explained the different types of chili peppers and ginger family members, which are important ingredients for making the base sauces in Bali. **Bumbu Bali** (aka. Base Genep, meaning "complete spice") is a rich sauce that is essential in cooking Balinese dishes. It's frequently found in appetisers, soups and main courses. For making this sauce, we used **four members from the ginger family**: turmeric, galangal, ginger and white turmeric (see my comparison photo below). Other ingredients are shallot, garlic, pepper, coriander, nutmeg, shrimp paste and chili. The **three types of chilis** often used in Bumbu Bali are the finger-length red tabia Lombok, short fat tabia Bali, and small fiery bird's eye tabia Kerinyi. The first one is the mildest, and the most commonly used is the middle one tabia Bali (Bali chili). That's also what we would use in the Bumbu Bali base sauce. Depending on the type of dish that will be made, all the ingredients listed above can be **chopped or ground**. The chopped one is typically used to season soup, while the muddled one is used to season meat dishes such as sate meat and chicken curry. We did both for the various courses in the meal. Chopping on a wooden block or grinding with a pestle and mortar both require a lot of energy. It is never easy to be a good cook! 🙂 Other base sauces commonly used in Bali cooking include **sambal goreng, sambal ulek, and sambal matah**. Among them, sambal ulek appears to be the most well-known outside of Bali. I remember being served this sauce a few times when eating in Asian restaurants. However, until the cooking lesson, I was unaware of the other sauces. I'm glad and grateful that the chef taught us how to make Bumbu Bali and sambal goreng that day. They all include basic ingredients like shrimp paste, but the rest differ slightly. For example, sambal goreng contains black peppercorns and coriander seeds, whereas sambal ulek contains tomato and kaffir lime, and sambal matah has lemon grass and coconut oil in it. All of them were so fresh and tasty, as well as very healthy. It's not difficult to make these delectable dishes at home once you've mastered the base sauce. When I was able to get the ingredients, I cooked some of these, and it was always a pleasant and satisfying experience. Food in Bali just hits different. I think it's also the presentation that's awesome. Although food that I am seeing is common where I am from except sate lilit, it's just the presentation that makes Balinese food differs from others.

Yes, yes and again yes. This is the food I am talking about. All fresh and ready to go. I didn't even know there is white turmeric. Is taste any different from the normal one? And do you maybe know if there is possible to get seeds for turmeric or galangal? Would love to add it to my garden

I'm also a big fan of this kind of fresh flavorful food. :) White turmeric tastes like a cross of ginger and mango to me. It's less common than the other three in Asian supermarkets in the West. I never planted them before... perhaps you can search the seeds for sale online?
