<div class="text-justify"><div class="pull-left">El cuajado de pescado salado es una tradición de mi país Venezuela, especialmente de la zona de oriente, es una combinación de pescado guisado, con papas, plátano macho frito y huevo, al igual que las hallacas cada familia lo prepara de diferentes maneras, agregando ingredientes extras como queso, o incorporando la papa en forma de puré, sea cual sea el estilo todas las formas son deliciosas, aunque eso sí, hacer cuajado implica mucho trabajo, es de esas comidas que necesitan colaboración de toda la familia, en mi caso recibí ayuda de mi hermana, ella hizo el único trabajo que no me gusta el cual es desalar el pescado y desmenuzarlo, del resto me encargue yo. </div>

<div class="text-justify"><div class="pull-left">Lo primero que se hizo fue quitar la sal al pescado, para ello mi hermana lo colocó en una olla con abundante agua y llevo a la cocina por unos 15 minutos, luego retiró el agua y repitió el proceso otra vez, finalmente lo lavó con agua fría frotando suavemente, el siguiente paso fue desmenuzar el pescado, mientras me encargué de lavar y picar todos los vegetales.</div>

<div class="text-justify"><div class="pull-left">También machaqué los dientes de ajo, en un sartén caliente agregué aceite, incorporé el ajo y los vegetales, sofreí un par de minutos y añadí el pescado, condimenté a gusto con orégano, curry, onoto y pimienta, no agregué nada de sal, cociné hasta reducir el tamaño de los vegetales, lo cual me tomó unos 15 minutos.</div>

<div class="text-justify"><div class="pull-left">Una vez listo el pescado lo reservé, pelé las papas y las corté en pequeños pedazos, laven muy bien y coloquen en una olla con agua, lleven a cocinar hasta estar suaves, cuando estén suaves trituren hasta formar un puré añadan la mantequilla y la leche y mezclen hasta conseguir un puré cremoso.</div>

<div class="text-justify"><div class="pull-left">Teniendo todos los ingredientes listos para armar el cuajado, procedemos a calentar la olla que usaremos, en mi caso uso un sartén grande, añado aceite y lo llevo 10 minutos al horno mientras que este precalienta a 180°C, al sacarlo añado una capa de huevo, otra de pescado y una de plátano.</div>
