Echamos a freír el pollo, en te caso yo lo hice en la hoya donde luego haría el arroz, pero puedes hacerlo en donde cocinaran las papas para aprovechar el sabor. 
Freímos solo hasta que esté cocinado pero sin dejar dorar, lo sacamos, dejamos enfriar y luego picamos en trozos muy pequeños.

Para prepara las papas las pelamos y para ahorrarnos tiempo al hervirlas en pedazos grandes, las picamos en cubitos y sofreímos, luego le agregamos 1 y 1/2 taza de agua, tapamos y dejamos hervir hasta que ablanden, lo cual será bastante rapido asi que hay que estar pendientes de que no se pasen.

Ya con las papas listas y después de enfriar las trituramos bien y hacemos puré, agregamos el pollo, el aji que habremos cortado finamente, el resto del ajo machacado, sal, pimienta y mezclamos bien. Ya con todo cocinado casi me lo como sin hacer nada más, pero resistí, tome pequeñas porciones y les di forma aplanada.

Tomamos un sartén y ponemos a calentar abundante aceite, cuando ya esté caliente colocamos a freír nuestra croqueta y cuando esté dorada volteamos,  repetimos el proceso hasta haber freído todas y listo, este es el resultado de las croquetas de pollo, yo las acompañe con arroz y ensalada de repollo y zanahoria, un plato muy rico para almorzar y que todos en mi casa disfrutaron mucho.
