A loving greeting to all my Hive friends, I am pleased to share with you a new recipe Sunday in the [Plant Power (Vegan)](https://peakd.com/c/hive-180569/created) community. This time I brought you a traditional dish from my region, its name is Mute or Mondongo, a very complete soup that is usually eaten on Sundays. Traditionally it is not vegan, but this is my cruelty-free version, which is tremendously delicious, so today will be a happy Mondongo Sunday.

Below I will share the ingredients and step-by-step to make a five-course mondongo.

**Ingredients**

- ¼ cup textured soybeans
- ½ cup hydrated chickpeas
- ½ cup short pasta
- 1 corn on the cob
- 1 sweet chili pepper
- 1 bell bell pepper
- 1 large onion
- 30 gr of long onion
- 30 gr of leek
- 15 grams of coriander
- 1 branch of celeri
- 1 carrot
- 1 clove of garlic
- 100 gr of pumpkin
- 1 celery
- 2 white potatoes
- 5 yellow potatoes

The first thing we will do is to hydrate the soy, for this we will put enough boiling water in the container where we have the soy and 1/2 tablespoon of salt, we will let it stand for 5 to 10 minutes. I do not recommend to hydrate the soybeans with the soup because when we hydrate it we also wash it and this way we avoid it to be bitter.

Next we will wash and chop the vegetables in small squares, we will do this with the long and big onion, the leek, the garlic, the bell pepper, the sweet bell pepper and the celeri.

When we already have everything chopped, we will put in a pot a jet of oil and we will pour all that we chopped and we will incorporate the spices. We will prepare to fry all this, I use my electric pot, but it does not matter if it is with gas stove, the important thing is that it is well sautéed.

When the vegetables are sautéed, look shiny and the spices are integrated, add 2 liters of water, the chickpeas and the texturized soy. We will stir it with the help of a spoon and we will leave it there until it boils.

These we are going to chop them, from a very young age I learned from my mother that the tubers in the soups are not chopped, they are chopped. This allows them to release the starch better and give the dish a better appearance.

At this point the broth should already be boiling, so we will add all our chunks and stir it with a spoon. We will let it cook for half an hour if it is a pressure cooker, in case it is not a pressure cooker we will let it cook for 1 hour or until the chickpeas are soft.

When it is ready we will incorporate the pasta and the capers chopped in very small pieces and we will let it cook another 10 minutes or until the pasta is cooked.

Our soup is ready, make sure the pasta is well cooked and the chickpeas are soft, also the starch will have thickened it. We will let it rest for about 15 or 30 minutes so that the flavors are better integrated, the most recommended is to wait this time to serve it, it makes a big difference.

Esta vez les traje un plato tradicional de mi región, su nombre es Mute o Mondongo, una sopa muy completa que por lo general se come los domingos. Tradicionalmente no es vegana, pero esta es mi versión libre de crueldad, que es tremendamente deliciosa, así que hoy será un feliz domingo de Mondongo.

A continuación compartiré los ingredientes y el paso a paso para realizar un mondongo para cinco platos.

**Ingredientes**

-	30 gr de cebolla larga
-	30 gr de puerro
-	15 gr de cilantro
-	1 rama de celeri
-	1 zanahoria
-	1 diente de ajo
-	100 gr de auyama
-	1 apio
-	2 papa blancas
-	5 papas amarillas
-	2 cucharadas de alcaparras
-	3 hojas laurel
-	¼ cuchara de paprika
-	¼ cuchara de comino
-	¼ cuchara de pimienta negra
-	Sal
-	Aceite
-	Agua

Lo primero que haremos será hidratar la soya, para esto pondremos suficiente agua hirviendo en el recipiente donde tenemos la soya y 1/2 cucharada de sal, lo dejaremos reposar de 5 a 10 minutos. No recomiendo que la soya se hidrate con la sopa porque cuando la hidratamos aparte también la lavamos y así evitamos que quede amarga.

Enseguida nos dispondremos a lavar y picar los vegetales en cuadros pequeños, esto lo haremos con la cebolla larga y la cabezona, el puerro, el ajo, el pimiento, el ají dulce y el celeri.

Cuando ya tengamos todo picado, pondremos en una olla un chorro de aceite y verteremos todo lo que picamos e incorporaremos las especias. Nos dispondremos a sofreír todo esto, yo uso mi olla eléctrica, pero da lo mismo si es con cocina de gas, lo importante es que quede bien sofrito.

Cuando ya los vegetales estén sofritos, luzcan brillantes y las especias se hayan integrado a ellos, incorporaremos 2 litros de agua, los garbanzos y la soya texturizada. Lo revolveremos con ayuda de una cuchara y lo dejaremos allí hasta que hierva.

En ese tiempo iremos limpiando las papas, el apio, la auyama, la mazorca y la zanahoria. Estas las vamos a trocear, desde muy joven aprendí por medio de mi madre que los tubérculos en las sopas no se pican, se trocean. Esto permite que liberen mejor el almidón y le dan mejor aspecto al plato.

En este punto el caldo ya debió hervir, así que agregaremos todos nuestros trozos y lo revolveremos con una cuchara. Dejaremos cocinar por media hora si es una olla de presión, en casi de que no lo sea lo dejaremos 1 hora o hasta que los garbanzos estén blandos.

Cuando ya esté listo incorporaremos la pasta y las alcaparras picadas en pedacitos muy pequeños y lo dejaremos cocinar otros 10 minutos o hasta que la pasta este cocida.

Nuestra sopa esta lista, asegúrate de que la pasta está bien cocida y los garbanzos blandos, también el almidón habrá hecho que se espese. Lo dejaremos reposar unos 15 o 30 minutos para que los sabores se integren mejor, los más recomendado es esperar este tiempo para servirla, se marca una gran diferencia.

Para terminar picaremos el cilantro y se lo agregaremos cuando ya esté servido y estará listo para comer. Esta es una de mis sopas favoritas, cada uno de los ingredientes y los detalles de la preparación hacen que se convierta en un plato increíble. Tenía años sin oír la palabra mute, y puedo decir que has hecho una gran versión veganizada y muy creativa de este  plato, que sin duda alguna tiene mucho sabor  y debe ser saciante como el original.

El uso de la soya deshidratada es una excelente idea para sustituir el producto animal, me parece genial que la hayas incluido, así como todos esos deliciosos vegetales y especias.
