Making Pan Con Pollo for Saturday Dinner.

How is everyone enjoying their weekend?  It has been pretty hot here now in British Columbia with record heat waves and it doesn't seem to be cooling much, but I'm not complaining yet but that is because I love the heat.

Today was also my 5th Saturday of 24 hr fasting, so I have been drinking a lot of water, which is great during this heatwave.

I also decided to make some Pan con Pollo (dish) which I wanted to make for a while now since my boys love it, but because I couldn't find watercress in the stores, I couldn't really make it, until I finally found some watercress.

First I washed the watercress and radishes.

Afterward, I departed the (whole BBQ chicken) into small pieces.

Made my own tomato salsa which is made of tomatoes, onion, garlic, yellow pepper, paprika, seasoning salt and chicken spice.

Next, I cooked the salsa for about 10 minutes and then added the pieces of chicken, which I simmered for about an hour.

Next I sliced the radishes.

Warmed up the buns in the oven.  Next I put the watercress in the middle of the bun, followed by chicken and then radishes on top.
