Asparagus Soup Regular and Vegan Recipe and How To

If you are like me and like asparagus but are tired of eating it the same way every-time, I suggest you try this super fast Soup. It Can be Vegan As Well I will have both ingredients for both normal and Vegan. Lets begin:

4 cups cut fresh asparagus up into 1/2 inch pieces
2 cups water, divided up 
1/4 cup finely chopped green onion or chives
1/4 teaspoon onion powder
5 tablespoons butter or Vegan butter called Earth balance
5 tablespoons all-purpose flour
1 teaspoon salt
1 tablespoon chicken bouillon for flavor or for Vegan use Not-a-Chicken bouillon for this
1 teaspoon white pepper
4 cups whole milk or 3 1/2 cups soy or hemp milk work best.

Place asparagus in a large saucepan and cover with 1 cup water. Next bring this to a boil,  then cover and cook for 3-5 minutes or until tender. Drain this, reserving the liquid. Add the asparagus into a food processor and blend. If you get long strings, then you cooked your asparagus to long. Strain through siv to get that out. All we need is the flavor and juices so don't fret if you throw some strings away. There is an easy fix, Don't over cook it. You will have a nice puree that will be added at the end.

Take another saucepan and saute onions in butter until translucent.  Next stir in the flour, salt and pepper until blended. Gradually stir in the milk, bouillon, reserved cooking liquid and remaining water. Bring this mixture to a boil. Cook this stirring occasionally for about 2 minutes. This will need to thickened. Stir in the cooked asparagus puree and cook on high until hot and everything is incorporated.

Some are mine others i got from friends and family.. I will be honest, im not really using steemit to blog but to write out all my recipes. I thought this was a cool way to share them and get my recipes onto my computer.  When I have more time i will stop with photos and do strictly video demos. Like this one, the last photo is from my mother's attempt at this.
